Dr. Rodney H. Perez is a Career Scientist I at the National Institute of Molecular Biology and Biotechnology, University of the Philippines Los Baños. He is currently the Program Leader of the Biotechnology for Food Feed and Specialty Products Program (BFFSPP) of UPLB-BIOTECH. Dr. Perez holds a PhD in Microbial Technology, an MS in Bioscience and Biotechnology, and a BS in Food Science and Technology. His groundbreaking work has earned him prestigious national and international accolades, including being named one of the Outstanding Young Scientists of the Philippines (2020) and becoming the first Filipino to receive the Young Asian Biotechnologist Prize (2021) from the Japanese Society for Biotechnology. He is the current President of the Philippine Society for Probiotics and Functional Foods, Inc. (PhilProFF) and a member of the International Executive Board of the Asian Federation for Societies for Lactic Acid Bacteria (AFSLAB).

Dr. Tahrir Jatli R. Alenezi is an Assistant Professor of Medical Laboratory Technology – Microbiology at Northern Border University, Saudi Arabia. She earned her PhD in Cell and Molecular Biology from the University of Arkansas, with a dissertation titled "The Effect of Microbial Bile Acid Metabolism on 𝐶𝑙𝑜𝑠𝑡𝑟𝑖𝑑𝑖𝑢𝑚 𝑝𝑒𝑟𝑓𝑟𝑖𝑛𝑔𝑒𝑛𝑠 Virulence." She also holds a masters degree in medical microbiology from Long Island University, where her thesis examined the Antimicrobial Activity of 𝐶𝑜𝑚𝑚𝑖𝑝ℎ𝑜𝑟𝑎 𝑚𝑜𝑙𝑚𝑜𝑙 (myrrh), and a bachelor’s in medical laboratory technology from Northern Border University. Her research focuses on microbial pathogenesis, bile acid metabolism, and the development of novel antimicrobials. Dr. Alenezi has authored and co-authored multiple peer- reviewed publications on 𝐶𝑙𝑜𝑠𝑡𝑟𝑖𝑑𝑖𝑢𝑚 𝑝𝑒𝑟𝑓𝑟𝑖𝑛𝑔𝑒𝑛𝑠, Campylobacter, and microbiota-host interactions. She has presented at international meetings, including the Poultry Science Association and the Conference of Research Workers in Animal Diseases (CRWAD).

Dr. Nonthaneth Nalinratana is a member of the Center of Excellence in Natural Products for Ageing and Chronic Diseases and a lecturer at the Department of Pharmacology and Physiology, Faculty of Pharmaceutical Sciences, Chulalongkorn University. His research integrates pharmacology, natural products, and computational approaches, with a focus on immunopharmacology, molecular-targeted therapy, and systems-level drug discovery. He is particularly interested in bioactive compounds from functional foods and medicinal plants for modulating immune and inflammatory pathways in cancer, ageing, and chronic inflammatory diseases. By combining computational pharmacology, in vitro studies, and translational research, Dr. Nalinratana has contributed to several peer-reviewed publications and collaborative projects in natural product–based therapeutics.

Dr. Pornchai Rojsitthisak is an Associate Professor and the Director of the Center of Excellence in Natural Products for Aging and Chronic Diseases at the Faculty of Pharmaceutical Sciences, Chulalongkorn University, Thailand. He earned his Ph.D. in Pharmaceutical Sciences from the University of Southern California and has extensive expertise in natural product-based drug discovery, nanoformulation, and AI-driven virtual screening. His research integrates traditional pharmacognosy with advanced computational tools to develop innovative therapeutics for ageing and chronic diseases. Dr. Rojsitthisak has authored numerous scientific publications and leads international collaborations in advancing innovation at the interface of functional foods, natural products, and modern drug discovery.

Dr. Pramuan SAITHONG is a Deputy Director and an Expert Researcher in the Department of Applied Microbiology, Institute of Food Research and Product Development (IFRPD), Kasetsart University.

His current active research focuses on upcycling and valorization from agricultural and food processing residues for innovative products with food biotechnology and study on probiotics application in food products. He has over 40 research projects externally funded since 2015. He has continuously published research and over 38 patents, with 18 for patents in food innovative products from 2020-2025. His research work received 3 awards from the International Innovation & Invention Show in 2022. Of these, 8 private companies have been licensed for commercialization from his research since 2017. He always provides his research knowledge for community enterprises or communities in many provinces in Thailand. He is often invited by various institutions as a speaker and a lecturer on food science and nutrition, microbial applications in the food industry or innovative fermented food products.

At present, he is an examiner of the biotechnologist career (Food Biotechnologist Level 5) of Thailand Professional Qualification Institute (TPQI) and a board member of The Center for Promotion and Competency Development of Supporting Staff in Higher Education Institutions, Council of University Administrative Staff of Thailand.

Dr. Anil Kumar A**l is a Professor and Chair of the Food Innovation, Nutrition, and Health as well as the Food Engineering and Bioprocess Technology Program at the Department of Food, Agriculture, and Bioresources, Asian Institute of Technology (AIT), Thailand. Recognized among the Top 0.05% of Scientists globally in Food Science (Stanford University & Elsevier, 2024), he is internationally known for his pioneering work on indigenous food systems, green valorization of agro-residues, biomolecular interactions in food systems, designer diets for health enhancement, and nanotechnology-based delivery systems that improve the bioavailability of bioactives.

Prof. A**l holds nine patents (US, EU, World, Canadian, and Indian) and has authored over 200 peer-reviewed journal papers (mostly Q1), 65+ book chapters, and 10 books, accumulating an h-index of 45 with 11,688 citations. His current research centers on alternative proteins derived from agro-industrial byproducts, underutilized crops, microalgae, edible insects, and microorganisms. To date, he has supervised 29 PhD and 120 Master’s graduates at AIT.

A sought-after keynote speaker, editor, and advisor, Prof. A**l serves on editorial boards of several leading international journals and has extensive experience leading research and consultancy projects on sustainable and safe food production, food safety strategies, and policy development. His consultancy work spans global organizations such as the EU, USAID, UK FCDO, ADB, World Bank, FAO, UNIDO, and UNEP, and numerous food and biotech industries.

He has also been appointed as Honorary, Visiting, and Adjunct Professor at various international universities and has undertaken academic and research engagements across Asia, Europe, and Oceania, including New Zealand, Thailand, Japan, Spain, India, Vietnam, Malaysia, Germany, and France.
