La revista Food Chemistry tiene un factor de impacto de 8.8 (ScienceDirect). La segunda fase de la investigación es lograr lo mismo y mejor pero con asistencia de Ultrasonido.

Assessment of total antioxidant capacity of altiplano colored quinoa (Chenopodium quinoa willd) by visible and near-infrared diffuse reflectance spectroscopy and chemometrics.
Evaluación de la capacidad antioxidante total de quinua coloreada del altiplano (Chenopodium quinoa willd) por espectroscopia de reflectancia difusa visible e infrarroja cercana y quimiometría.

Quinoa (Chenopodium quinoa Willd.) seed has been recognized as an extremely nutritious grain, due to its content of protein, essential amino acids, essential fatty acids and minerals. In addition, quinoa is an important source of antioxidants and it has been used for medicinal purposes in humans. The high antioxidant capacity of quinoa is mainly the result of its phenolic and betalain content.
Thirty-eight colored quinoa seeds were collected from different provinces from the altiplano region of Puno (Peru), our aim in this study was to measure the TAC (Total antioxidant capacity) of altiplano colored quinoa using direct non-invasive Vis-NIR spectroscopy and chemometrics.
In conclusion; QUENCHER-DPPH results were 1.03–7.03 times higher than the EAC-DPPH values, which means that the non-extractable antioxidant capacity of altiplano colored quinoa represents some 2.8%–85.8% of the TAC. The best multivariate models to predict the TAC were obtained when the Vis-NIR spectral data were pre-processed using SG, DT and MSC scattering correction for whole quinoa seeds and SG, KM, SNV for ground quinoa. Thus, Vis-NIR spectroscopy and chemometric enable us to predict the TAC, including both the extractable and non-extractable fractions, in colored quinoa from the altiplano region.
