101. Raw Courgette Noodles with Basil Pesto
One of the most easiest dishes that you could ever prepare. Particularly enjoyable if you are a vegan/vegetarian and/or a "healthy food" freak.. All you do is make pesto by processing basil leaves, pine nuts, garlic cloves, black pepper and olive oil. Mix it with some freshly julienned courgette and enjoy :)

98. Roast Potato Salad
A simple roast potato salad to kick off a long void. Will keep trying to add as and when possible. Note that all these recipes are quick and easy; they can be prepared by anyone and everyone. No cooking skills are a prerequisite for this :)
Directions:
1. Boil the halved/quartered potatoes in salted water for about 5 mins
2. Drain the water and grill the potatoes in a preheated oven @ 200 degrees for about 15mins. Spray some olive oil before grilling so you get a crispier texture on top
3. After you take them out of the oven, toss them with sundried tomatoes, diced olives, spring onions, pepper and lime juice. Easy peesy :)

97. Grilled Tandoori Mushrooms
It's been forever since I last posted anything in this page. Hopefully it won't be this long before I post the next one. Here's a quick 20min recipe for those who love mushrooms and that kick of heat as well. It certainly tastes as good as it looks :)
Directions
- Preheat the oven at 200 deg C for about 10 mins
- While the oven's heating up, marinate the mushrooms in a marinade of yogurt, chilli powder, cumin powder, lemon, lime & salt.
- Chuck the marinated mushrooms in the oven and fan bake it for 10mins
- Serve it hot, garnished with some onions and spring onions.

95. Beetroot Risotto garnished with Parmesan
A really simple dish that can be done in no time in a pressure cooker. Just add risotto rice with about 500ml of Sauvingon Blanc and some water in a pressure cooker and cook until the cooker blows the whistle a couple of times. Turn the stove off and once it's ready to open, add to it some pan fried very finely diced beetroot, tempered with mustard seeds and black pepper. Add some salt to taste and top the dish off with parmesan cheese.. Voila !! Ready to be served with any side dish of your choice :)

94. "Veg Ball" Manchurian..
- Veg Balls made of Bak Choy, Baby Corns, Brocolli & Carrot.. All steamed and grated.
- These balls then dipped in a batter made of white flour, corn flour & ginger-garlic paste, and deep fried
- Once deep fried and rested, the balls are tossed in sauce made with dark soy, vinegar, sweet chilli paste, tomato sauce, salt and ajinomoto.
- Garnished with Spring Onions lifts the dish a notch :)

A decadent cake that tasted as good as it looked if not better. A recipe that was completely put together by Soujanya, with very little or no effort from myself. As deluctant as it may look, it had all the healthy components in it with minimal sugar, non-white flour etc ! Share the pic if you'd like to know this simple but yummy recipe...
