The neglected cheese. A covid result.
I really think there should be a photo competition for neglected cheeses.
This very tiny Parmesan was made at my last pre Covid cheese class.
It was put in the cheese fridge and then we went in to lockdown on our farm. (2 hours away)
The cheese remained unloved and abandoned. It developed a hard crust then lots of mould. The interior of the cheese dried out. The taste of the interior is great.
It is a reminder why we check and turn our cheeses constantly. Removing any mould as it develops. A good learning example.
