Gazpacho
This tomato-based Andalusian soup is most famous for being served cold. This can be quite a shock for those who aren't expecting it, but in the searing heat of a Seville summer, the attraction becomes clear.
Its principal ingredients, aside from tomato, are peppers, garlic, bread and lots of olive oil.

Paella Valenciana
Paella is perhaps the most famous Spanish dish of all, and certainly one of the most abused. Authentic paella originates from the region around Valencia, and comes in two varieties: Paella Valenciana, with rabbit and chicken; and seafood paella.
Saffron gives the rice its color, and the base should be left to crisp into a mouth-watering black crust, called the socarrat. Always eaten at lunchtime.

TORTILLA DE PATATAS
The Spanish omelette is called a tortilla de patatas, but watch out! Tortilla in Spain is not the same as it is in Mexico, tortilla is an omelette in Spain. And it is not the same thing as an omelette in the US. Omelettes are very famous in Spain. You can have a spinach omelette, green bean and potato omelette, vegetable omelette or you can easily create your own version of any omelette. But, the most traditional one is the Spanish potato omelette. I love this recipe because It so versatile. It can be served as breakfast, lunch or dinner, can be served as a “tapa” or as a main dish and it’s good both warm and cold.

Chorizo
In addition to the famous jamon, Spain is rich in a variety of sausages, among which Chorizo should be distinguished (Spanish: Chorizo). This sausage is also made from pork, has a spicy taste and red color, which is given to it, which is part of the paprika. Thin slices of sausage are used both as an independent dish and added to others to add piquancy and aroma.
