🥞 Pancake Friday 🥞

Is there any better way to end the week? These delicious pancakes/pikelets are made with a banana, 3 eggs and 100 grams of almond meal blitzed together.

🍓 I make ‘strawberry jam’ out of a 500 gram packet of frozen strawberries and 1 tbsp of honey simmered together for 20 mins. Blitz it when it’s cool. The mixture is really runny and I also use it to hide certain vitamins and probiotics that the kids take 💪

Our fave green smoothie. Great for breakfast, afternoon tea or anytime-energy boost ...

- 1 cucumber (Lebanese or big chunk of telegraph)
- large handful spinach (60gms)
- few stalks of Italian parsley and mint
- chunk of fresh turmeric and ginger
- daily supplements (Vit C powder, collagen powder etc)
- big handful of ice (protect enzymes when blitzing)
- glass of water or coconut water

Blitz for a minute in high speed blender until smooth. If you can resist drinking it all you can put in the fridge for the next craving or snack time.

Chocolate Smoothies - packed full of veg 🥤

My daughter has the sweetest tooth and I really struggle to get enough vegetables into her (said every parent everywhere) but I've come across this 'trend' for veggie packed smoothies and they are going down a treat! 🥦

🍠I've been cooking extra kumera and cauliflower when I'm steaming veggies and then freezing them because they are the secret veggie ingredient in my smoothies. Bonus - they don't turn your smoothie into swamp water.

Recipe

✅1 ½ cups Mylk (we use coconut)
✅½ cup frozen cauliflower
✅½ cup frozen kumera
✅3 medjool dates
✅3 Tablespoons cacao powder
✅2 Tablespoons nut butter
✅⅓ avocado

Place in a high speed blender and blitz!
If you think it needs sweetening up, add some manuka honey (I need to add 1 Tbsp for my daughter)
Add some spinach leaves if you want an extra bit of green.
Coconut yoghurt is pretty tasty added to this this recipe too.

⭐️ Handy tip- any leftovers go straight into the ice block maker in the freezer and are served for afternoon tea 🥤

🍤 Rice paper rolls are a guaranteed way to get more veggies in my kids and well worth the time it takes to assemble them.

I use shredded chicken or prawns, cut carrots, cucumber and capsicums into matchsticks, thinly slice cabbage and add some mung bean sprouts and home-made peanut sauce.
Place them on a wet circle of rice paper and wrap them up burrito style! Tasty and easy.

Tested out a variation on cauliflower tabouleh

I don't like raw cauli, so I cooked some chicken breasts and steamed cauli rice. While that was cooking I cut up the veges, then made the dressing (cumin, ginger, olive oil), shred the chicken then mix all together.

Extremely easy to make and super delicious. I was a little light on the herbs in my garden but still tasted amazing. Highly recommend you try this and tell me what you think :D

I love this banana bread recipe for lunchboxes. It freezes well and I've subbed out most of the ingredients at one time or another and it is always successful. I use ground sunflower seeds to make it nut free.

Dairy free gummy.

Made with
200gm coconut cream
2TBsp coconut butter
2TBsp gelatine
1TBsp sweetener of choice

Gently heat coconut cream and gelatine. Mix with other ingredients then pour into chocolate molds.
