Ardie’s Sweet and Salty Cookies
A firm family favourite, these cookies are the perfect mix of crunchy potato chips, gooey chocolate chips and buttery cookie goodness. Ideal for lunchboxes, after pre-school treats, or sharing over a cuppa with family and friends.
Makes 36 servings
Ingredients:
• 2 1/4 cups all-purpose flour
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1 cup very soft unsalted butter
• 1 cup white sugar
• 1/2 cup light brown sugar
• 1 large egg
• 2 tablespoons milk
• 1 teaspoon pure vanilla extract
• 2 cups lightly crushed potato chips
• 1 cup dark or milk chocolate chips
Method:
1. In a bowl, whisk together the flour, baking soda and salt. Set aside.
2. In a separate bowl, beat the butter, white sugar and brown sugar until light and fluffy. Add the egg and mix well. Pour in the milk and vanilla, then mix again until smooth.
3. Fold through the potato chips and chocolate chips. Add the dry ingredients and gently mix until everything is just combined and a dough forms.
4. Cover and chill the dough for about 30 minutes, or until you're ready to bake. If you're short on time, you can bake them straight away.
5. Preheat your oven to 190°C and line a baking tray with baking paper.
6. Scoop heaped tablespoons of dough onto the tray, leaving plenty of space between each one as they'll spread while baking.
7. Bake for around 12 minutes, or until the edges are lightly golden. Leave the cookies on the tray for 5 minutes before transferring them to a wire rack to cool.

Our older children are great role models and supporters of their younger classmates.

The Nido children have taken on the role of bug investigators. They will search every corner of the playground for visiting bugs to carefully relocate to our five star Nido bug hotel.
