How to get an EASA licence...
You will need to read the appropriate documents first. For a UK EASA licence, read CAP804 for in-depth information -http://www.caa.co.uk/docs/33/CAP804%20April%202015%20searchable.pdf
In particular, read Part Q for advice on converting a foreign (ie NZ) licence.
You will need an EASA Class 1 medical. Note that ALL initial issue medicals must be done at the CAA medical unit in Gatwick, UK (if you are doing a UK EASA licence - otherwise, any member state will do). Renewals can be done in New Zealand at Remuera Doctors - http://www.remueradoctors.co.nz/pilot-medicals
If you need to sit the EASA exams, I recommend Bristol Ground School. They aren't the cheapest, but they are good and are well regarded. They specialise in distance learning, so you can do their course here and then sit the exams in Hamilton. See https://www.bristol.gs/bgs-course-structure-fees/
The actual exams can be sat in New Zealand (Hamilton) - see http://www.caainternational.com/aviation-examinations/easa-part-fcl/new-zealand-part-fcl-exam
The flight training and some aspects of licence conversion can be done in the USA where prices are a lot lower. There are dozens of schools doing EASA conversions - for example, https://www.flyeft.com/app-easa-fast-track/ Just choose one that suits you. The best way is to choose a school that has a UK partner as this tends to make the IR training more seamless. Some US schools have Spanish affiliates, which can be a good option if you want to avoid UK weather!
Note that the Instrument Rating initial issue can only be done in an EASA member state.
Once you have done all that, you will need to undertake the Multi Crew Co-operation course - a two week course that is a requirement in EASA countries if you want to fly anything over 5700kg multi-crew. There are dozens of providers of this course. Some are cheaper than others, but the more expensive courses tend to give you a much better preparation (for example, the Lufthansa course, https://www.google.co.nz/url?sa=t&rct=j&q=&esrc=s&source=web&cd=2&cad=rja&uact=8&ved=0CDMQFjABahUKEwi059_Em5bJAhVhOKYKHWlwDbc&url=https%3A%2F%2Fwww.lufthansa-flight-training.com%2Fen%2Fmulti-crew-cooperation&usg=AFQjCNFOttEzx_wzW2lZxOJrXGxPa8EAjg
Is it worth it? If you want to work in the airlines - absolutely!
