🍒 MAY COCKTAIL COMP WINNERS 🍒

This month’s winning creation: Cherrilicious.

Built around Hennessy VS, balanced with a homemade cherry shrub for bright acidity and depth, then rounded out with a touch of syrup and Fee Brothers Fee Foam for a silky finish.

Recipe 👇

• 60ml VS
• 30ml Cherry Shrub
• 15ml Syrup
• Fee Foam

Shake, strain, grate some chocolate over the top, garnish with a cherry, and enjoy.

One thing we love about cocktail comps at EBS is seeing students experiment with ingredients they might not normally reach for. In this case, the cherry shrub brought a perfect balance of sweet, tart, and fruity notes that worked beautifully with the rich character of the cognac.

Last week we had our first ever BASIC BARTENDING COURSE in Amsterdam and what a week it was!! 🍸🍸🍸

In just five days, we saw amazing progression and had the best time working with such a wonderful group of bartenders!! 😎

Big congratulations to our April course winners 🏆🍸

For this month’s cocktail competition, the brief pushed creativity and the winning serve delivered something original: “Greek Salad” 🥗

Recipe:

* 45ml Hendrick’s Gin
* 15ml celery gin
* 25ml salad syrup
* Oregano tea rinse
* Feta foam & mini Greek salad garnish

A fresh, savoury profile with clean herbal notes and a creamy finish - a great example of thinking beyond the expected while keeping balance in mind.

Why it worked:
brings subtle cucumber and rose notes, which pair naturally with the vegetal and herbal elements, keeping the drink light, structured, and surprisingly refreshing.

February Cocktail Competition Winners 🏆🔥

Big cheers to our champions for their “Solar Sour” – a cocktail that absolutely delivered on balance, creativity and complexity. ☀️🍊

This drink is bright and citrus-forward at first sip, but opens up into layers of herbaceous depth and subtle bitterness that keep you coming back for more. The magic? adding structure and length, giving the cocktail that beautiful backbone and aromatic lift that ties everything together

✨ Solar Sour Recipe:
• 40ml Patrón Blanco
• 20ml Aperol
• 20ml Fresh Lemon Juice
• 15ml Orange & Rosemary Syrup
• 3 dashes Fee Brothers Mole Bitters
• 5 dashes Fee Foam
• Garnish: Orange zest & fresh rosemary
• Finished with Aperol caviar

The agave brightness meets bittersweet orange, lifted by citrus and rounded with rosemary warmth. The Mole bitters bring spice, cocoa depth and complexity, while the Fee Foam creates that silky texture and perfect finish

A seriously well-structured sour that shows technique, balance and flavour layering at its best 👏
