Foodies en beroepsmatige koks halen hun hart op met de vegetarische koksopleiding van VIP Health & Nutrition. Binnen een half jaar ben je gecertificeerd om beroepsmatig aan de slag te gaan met de vegetarische en biologische keuken. De vegetarische koksopleiding is bedoeld om beroepsmatig in te zetten. Je kunt eventueel kok of cateraar worden, recepturen ontwikkelen voor een eigen blog, maar ook e

en-op-een begeleiding bieden bij het aanpassen van voedingspatronen. Bijvoorbeeld door mensen te helpen met het ontdekken van nieuwe, veelzijdige gerechten met veel meer groentes in de hoofdrol. Vergroot je productkennis en leer nieuwe kooktechnieken en smaken kennen. De vegetarische koksopleiding duurt een half jaar, waarbij we 1 keer in de maand bij elkaar komen. Daarnaast volg je lessen in onze online leeromgeving waar extra opdrachten huiswerk, video-instructies en weetjes worden aangeboden. Freeze Dryer: My New Kitchen Playground

When I first heard about a freeze dryerI was immediately captivated—not because it’s high-tech, but because it opened up a world of new possibilities in my kitchen, especially for my wild foraging passion. Suddenly, I could preserve the flavors of the season forever,without losing their essence.

A World of Opportunities
I’m still exploring, but the first experiments have already been magical. Wild fruit powders that bring summer back in winter. Tough leaves like plantain or nettle, transformed into crisp, flavor-packed snacks. Herbs that retain their aroma but in a **light, airy form**—perfect for sprinkling over dishes or blending into teas.

What surprises me most is how versatile it is. From powders for baking and liqueurs to freeze-dried vegetables for my meal prep And the best part? No worries about shelf life. No fridge needed, no rush to use everything up.

Wild Foraging in a New Light
As a forager, I know how fleeting the harvest can be. With the freeze dryer, I can waste nothing. Too much blackthorn blossom? Dry it and grind it into a powder for my pastries. An abundance of wild strawberries? Turn them into **crunchy snacks** or add them to my homemade tea blends.

I’m excited to see where this journey takes me. Maybe I’ll discover new flavors, new combinations, or new ways to use my harvest. The possibilities seem endless.

**Herbs from the garden — the luxury of abundance. 🌿**

Lemon verbena is known for its unique, intensely fresh fragrance and delicate citrus flavour.

Vacuum distillation is perfect for capturing those precious top notes without losing their freshness to heat.

The first hydrosol: intensely lemony, fresh and floral, with hints of citronella and eucalyptus.
pH 6.2.
On the palate: slightly bitter, powerful and aromatic.

And then an unexpected combination: **lemon verbena and lavender.**
The bright, citrusy freshness of verbena meets the soft, floral character of lavender — a surprisingly beautiful pairing.

A second run gave around 100 ml — much softer, with the fragrance almost disappearing. A beautiful reminder of just how volatile these delicate aromas are.

And then there’s the green residue: still full of flavour, beautifully vibrant and perfect for turning into a silky lemon verbena syrup.

Wild Carrot Harvest & Hydrosol Experiment
Just foraged wild carrot—seeds and flowers still intact. This resilient plant thrives in drought, and it’s abundant right now. I’ve always been fascinated by the scent of its seeds.
I distilled a hydrosol using both seeds (hydro) and flowers (steam). The first run was soft: unmistakably carrot, but with a fruity, pear-like note. The second run was bolder, revealing anise undertones. The pH is 6.39, though the liquid at the bottom is bitter—perfect, though, as a natural dye for textiles.
Now, I’m dreaming up culinary uses: carrot cake with frosting made from this hydrosol, wild pear crumble, or even a gazpacho with a few drops and a touch of parsley oil. vacuum distiller from

Vacuum Distillation: Unlocking Unexpected Flavors
The quest for new aromas and tastes never ends! With my vacuum distiller, I’ve crafted two intriguing experiments:
🌿 Hogweed Seeds, Angelica Seeds, Ginger & Orange Peel
A bold, earthy base with warm, spicy notes. The hogweed adds a subtle green freshness, while angelica brings a deep, resinous sweetness. Ginger delivers a fiery kick, and orange peel finishes with a bright, citrusy lift. A complex, mature flavor that lingers.
🍒 Wild Cherries with Sour Cherry Leaves
A surprisingly fresh, fruity profile with a hint of bitterness and floral undertones. The sour cherry leaves add a delicate, almond-like depth, while the wild cherries provide a sweet, slightly tart finish. A refreshing, unexpected combination.
From the residue, I’ve made a syrup and added hydrosol for extra depth. The results are versatile and full of surprises—who’s brave enough to try?

Wat een heerlijke Open Tuin-dag bij Jardin d’Ingrid! 🌿
Tijdens mijn demo liet ik zien hoe hydrodistillatie onder vacuüm werkt. Samen proefden we het verschil tussen een siroop van de hele plant en dezelfde siroop verrijkt met hydrolaat – verrassend hoeveel geur en smaak dat toevoegt!
Verder waren er lokale producenten van cosmetica, bier, keramiek en vlechtwerk, prachtige natuurwandelingen en zelfs een nachtvlinderdemo. Een dag vol planten, ambacht en inspiratie. ✨

🌸 Time of Flowers & Hydrosols in the Vosges!
This weekend, and I hosted a wild foraging walk, tasting, and demo in the Vosges. With the heat in mind, we focused on floral drinks and hydrosols—and it was so special to use my vacuum distiller ( )to craft some of them! ✨
My new creations:
🌼 Rose hydrosol & dog rose-poppy hydrosol
🍃 Wild sage cordial + wild sage hydrosol
🍹 Dandelion-mandarin shrub
🍯 Black tea with ground ivy & honey
🌿 Nettle cordial (it turns pink!)
🍓 Strawberry-rhubarb-watermint shrub + hydrosol
🌲 Spruce ch*****ne with spruce hydrosol
After the walk: a feast with couscous salad (mountain fennel, wood sorrel 1 year old juniper oil), soft cheese with red clover, salad with pickled rose petals, douglas spruce oul and fine spruce salt, nettle wild garlic pesto and sourdough bread from the wood oven by 🥖.

Schatzoeken in het groen
De ochtendzon filtert zacht door de bladeren als ik met mijn trouwe speurder het bos in loop. Zijn neus werkt als een kompas, dapper op jacht naar bosasperges—die gouden schat die maar zo kort te plukken is. Elke stap voelt als een avontuur, zijn staart recht omhoog, mijn hart vol verwachting. Samen volgen we het spoor, tot we de schat vinden: die tere, groene pareltjes tussen het mos.
Thuis wacht de beloning: een eenvoudig, maar heerlijk maaltje, gekookt met liefde. En ja, ik geef toe—ik geniet er alleen van. Want mijn kat? Die kijkt met halfgesloten ogen toe, alsof hij weet dat hij de echte held van deze dag is. Want zonder zijn speurneus was er geen schat, geen avontuur, geen verhaal.
Soms is het mooiste aan eten niet de smaak, maar het verhaal erachter. En dit? Dit is ons verhaal.

Wilde cress maken is echt zo’n klein experiment waar ik blij van word. Eigenlijk maak je gewoon een bakje tuinkers, maar dan met zaden die je zelf buiten hebt gevonden.
Mijn eerste test is met de paardenbloem — zo’n plant waar al zoveel in zit. De jonge blaadjes zijn heerlijk, al worden ze snel wat bitter. In de tuin kun je ze ook bleken door ze af te dekken, dan blijven ze zachter en milder.
Maar de zaden… die vind ik misschien nog leuker.
Die pluizige bollen zijn eigenlijk al perfect verdeeld. Ik pluk ze, leg ze op een laagje zaaigrond en “plak” ze een beetje vast met water. Ik haal de pluisjes er niet eens af — ze helpen juist om alles mooi te verspreiden. Dan gewoon vochtig houden… en wachten.
En dat wachten duurt helemaal niet lang. Voor je het weet heb je een klein, wild cress-bakje. Fris, een tikje bitter, levend.
Nu wil ik andere zaden gaan proberen. Niet alles werkt even snel of even lekker, maar juist dat uitproberen maakt het leuk.

Afgelopen week deed ik een prachtige workshop bij Lenny Oosterwijk — leren kijken in de natuur.
De ochtend begon met een introductie in portretfotografie bij daglicht. Niet technisch, maar aandachtig: vertragen, afstemmen, zien wat er al is. Daarna zelf oefenen — spelen met licht, schaduw en positie.
’s Middags trokken we de natuur in — een vallei, midden in een Natura 2000-gebied — om diezelfde principes toe te passen. Kijken voorbij registratie. Ruimte voor abstractie, voor een eigen interpretatie.
Prachtige locatie, goed gezelschap, heerlijk eten, en ’s avonds een film onder de open lucht… alles klopte.
Het thema leren kijken — bewustzijn en aandacht — voelt voor mij als een basis voor alles. Hoe je leert, hoe je je vethoudt tot je omgeving..
Lenny is een geduldige, positieve docent met een scherp en zacht oog tegelijk.
Een magische dag Lenny Oosterwijk is een natuur- en portretfotograaf die werkt vanuit aandacht en verstilling. In zijn beelden — van mensen tot landschappen — zoekt hij naar wat er onder de oppervlakte ligt: licht, ritme en aanwezigheid. Zijn werk beweegt tussen documentair en bijna abstract, met de natuur als belangrijke bron van inspiratie.

One of my favorite early spring forages(among a few): primrose and blackthorn blossom. 🌼🌿
Handle with care though — these first blooms are vital for awakening bees and pollinators. Harvest lightly, and only where nature offers abundance. Primrose, in particular, is on the Red List in the Netherlands. Hete i am working in france.
Primrose carries a gentle, chef’s kind of complexity: honeyed and softly floral, with a warm, almost hay-like depth and a subtle anise note that lingers quietly in the background. It doesn’t shout — it rounds. I like to capture it in oil, vinegar, salt and sugar; each preparation holding a different facet of that soft golden warmth.
Blackthorn blossom moves in a different direction — fuller, more enveloping. Almond-like, with that unmistakable marzipan tone, slightly creamy, almost velvety on the nose. Less about freshness, more about body. I distilled it into a hydrosol and blended it with sugar — an ongoing experiment towards a non-alcoholic amaretto, capturing that soft, rounded almond sweetness in a different form.
This is the moment I wait for every year — when aromas are still delicate, fleeting, and everything feels like a promise.
