International Educational Center in Macrobiotics, Natural Life Style & Ideal Food Pattern For Humanity
Adelbert and Wieke Nelissen, inspired by the leading teachers of macrobiotics Michio and Aveline Kushi, started the East West Center in 1975 in Amsterdam. The East West Center was the first internationally oriented study center for macrobiotics in Europe. In 1978 Adelbert and Wieke founded the Kushi Institute of Europe, at first as a part of the East West Center. Since 1985 the Kushi Institute has become their main activity.

Dear friends of Deshima, *Letter about Kushi Institute of Europe under
In this strange and, for some, difficult time it will probably not come as a surprise to you that also Deshima is in trouble. In the beginning of the lock down we were optimistic and had hope we could continue and survive until everything would be back to βnormalβ. But what we consider normal will probably not happen for a long time.
We have made the very difficult and sad decision to close Deshima, the shop and web shop and the lunchroom by September 1st 2020.
We want to thank you from our hearts for your support over the years, as a customer and/or student, backing our ideas of quality foods and macrobiotics.
Although we were a small business, we think that the standards of Deshima have had an influence in the word of natural food.
In the mid 80th Deshima lunch service and natural food shop were established by Adelbert and Wieke Nelissen. Both have been active in the field of macrobiotics since the 70th. Their first natural food shop developed soon in a production center under the name of Manna. The production of high-quality foods not commonly available was started, including tofu, smoked tofu, tempeh, seitan, natto, and a variety of sourdough breads. Especially from the sourdough bakery many students started their own bakery, in cities all over the world. And many of those products initiated and developed by them are found now even in super markets.
Sadness is a feeling we probably all share, definitely our family and our wonderful employees, but we want to stay positive and look into a future that will carry new ideas and possibilities to bring more peace into this world.

We know the closing of Deshima is already quite soon. You can still do all your shoppingβs in our shop and webshop until September 1st 2020. Dear students & friends of the Kushi Institute of Europe
In this time of corona lock down and social distancing it is almost impossible for us to continue our macrobiotic educational program as usual. Social distancing makes it difficult to have students in high enough numbers to make things work. Besides that, we always had students from all over the world, which was a joy for all of us. But, as you know, traveling, especially by airplane, is impossible, even risky. And we do not know how this will develop in the coming time.
Therefor the educational activities (Kushi Institute, The Art of Life School, the cooking classes and study weekends) will be on hold. For sure we will come back with macrobiotic educational programs, in what form is not clear yet. But be sure, our heart is there and we will explore possibilities for teaching macrobiotics in all its aspects.
Thank you all for your wonderful presence, friendship and studious mind. `You were great teachers for us, together we could come to a deeper understanding of the Order of the Universe. Never lost in this strange time.
Many friendships originate from the Summer Conferences, the Art of Life School, the study weekends and the regular cooking classes. Letβs cherish this. We, teachers and staff, look back at an immensely inspiring time, thank you again.
So, new beginnings. We will contact you as soon as the corona situation calms down and we can see possibilities for teaching again.

Wat een feest!
Wij mogen jullie weer verwelkomen in onze lunchroom!
En wat hebben wij jullie gemist!
Natuurlijk zien wij veel van jullie nog wel in onze winkel en dat geeft ons allen een heel fijn gevoel. Door jullie zien wij een lichtje branden aan het einde van de tunnel!
Vanaf 3 juni zijn jullie weer van harte welkom om te genieten van een volwaardige lunch.
Naast de lunchroom hebben wij ook onze lesruimte voor jullie omgetoverd tot lunchroom ruimte, zodat de mogelijkheid er is voor jullie om met ruimte tussen elkaar te genieten van jullie maaltijd. Alle dagen zullen wij een wisselend menu hebben.
Laat je verassen, wij zorgen altijd voor een volwaardige samengestelde lunch. Voor een sterke immuniteit!
Hoe gaan wij te werk?
Wij zullen alleen werken met reserveringen.
Iedereen die aangeeft een gezamenlijk huishouden te delen kunnen samen een tafel delen.
Ook staat gezondheid voorop. Iedereen die zich gezond voelt is uiteraard van harte welkom.
Binnen Deshima houden wij ons sterk aan de afstandsregels en hygiene voorschriften. Met ons team doen wij ons uiterste best om jullie gezondheid te waarborgen.
Hoe te reserveren?
De Lunchroom is geopend van woensdag t/m zaterdag.
Wij zullen gaan werken met 3 shifts per dag.
12.00-13.15 uur
13.30-14.45 uur
15.00-16.15 uur
Je kunt reserveren en aangeven voor welke dag en welke shift je graag zou willen komen.

We can welcome you again in our lunchroom!
Oh what did we miss you!
Some of you we still met in our shop and that gave us such a good feeling. Because of all of you we see the light shining at the end of the tunnel!
From June 3rd we can welcome you again to come and enjoy a healthy lunch.
Next to our lunchroom space we transformed our classroom into a lunchroom space as well, so you can enjoy your meal with distance among each other.
Every day we will have a changing menu.
Surprise yourself, we will make sure that you will have a well balanced healthy lunch. To keep your immune strong!
How does it work?
We will only work with reservations.
Everyone that let us know they share the same household can share a table together.
Health is upfront. Everyone that feels healthy is very much welcome.
Inside Deshima we strongly keep the distance rules and the hygiene rules. With our team we do our best to keep you all healthy.
How to reserve?
De Lunchroom will be open from Wednesday till Saturday.
We will work with 3 different shifts per day.

Dear lovely friends,
We would like to invite you for our upcoming open day with a free cooking class on January 25th.
In this cooking class, Valentina Nelissen will teach you the basic principles of the plant-based macrobiotic cuisine.
In Deshima we offer many cooking classes, cooking workshops, women's health weekends, nine star ki weekends, baking weekends and our international school program: The Art of Life School.

We are so excited and proud to present to you the new cookbook written by our teacher Alexander Gershberg.
Since 1969 our mission was to teach natural health and natural healing through macrobiotic life style and to bring it to the wide public. For many years we were waiting for a modern cookbook that captures the essence of the 5 Chinese elements and gives a practical way of how to use it.
With beautiful photography and delicious recipes you will dive into the ancient wisdom of the traditional Chinese medicine. What dishes can you prepare to feel energized, stronger and happy?
For the theoretical part of the book Alexander was supervised by our leading teachers: Wieke Nelissen, Alex Jack and Valentina Nelissen.

Coming Saturday Alexander will be giving a special cooking class about the healing powers of food and present the subject of his new book. Come and get familiar with the main principles of the 5 elements in cooking and how to apply it in your daily life.
