Monkbeard’s Frittata today is on the menú! 🍳 frittata has a special place in my heart because it reminds me of my grandma, Anna. She made frittata probably twice a week with all the yummy vegetables she harvested from her garden. I remember helping her breaking the eggs and my eyes gasping with surprise when the frittata was ready. I like flipping it in the pan like she used to do, but you can also cook it in the oven. March and April is the Monk’s beard season 🥰 One of my fav veggies EVER! stems. It’s packed with fiber, vitamins A and C, and minerals like calcium and iron, making it a nutritious boost for digestion and overall health. I love it in combination with tomatoes and it marks for me the spring season 🩵☘️.

* 4 eggs
* 50 g Parmigiano
* 1 bunch of monk’s beard
* 12 cherry tomatoes
* 1 red onion
*1 teaspoon of turmeric
* salt & pepper

I grew up in a small village with around two thousand people. I grew up with my grandma telling me that having a piece of land is the biggest blessing you can possibly have. I spent my childhood taking care of a vegetable garden with her, eating what Mother Nature gave us day after day, season after season, and I kept that sweet advice close to my heart.

It has been more than 20 years since those afternoons in the garden with her, but I have held onto her words ever since. And now, after so long, I am passing this knowledge on to children in another country.

My heart is so full of joy it could explode. This is my second year collaborating with , where I volunteer in the gardens. Together with a school, we cook what we harvest. The children witness the whole process—from seeds to plants, and finally to vegetables.

They don’t just learn where food comes from—we also learn to take care of it and to respect it. ❤️

I feel so grateful for this life, for all the opportunities this country has given me, and for having kept this dream so close to my heart all this time. Grazie ❤️ ( many more garden adventures are coming into this digital world soon, I warn you 🤣🤣)

Wow I feel very emotional writing this down, every year I want to share and celebrate this huge milestone of mine my biggest dream since I finished school and yet I felt afraid to share it perhaps because I was feeling unconsciously afraid to lose it? Honestly it doesn’t matter because now I just want to share this love with all the people around me, I want to share how proud and grateful I feel to do what I LOVE what I kept in mind all the time I felt insicure or I thought I won’t be able to make it. I ALWAYS wanted to become a teacher, I always wanted to inspire and support children and do what it has been hugely helpful for me while I was growing up, being a teacher and simply help children and I don’t know how, in a blink of a eyes… it has been already 3 years, the best most wonderful 3 years of my life ❤️
