SUCCHINI SLICES

Ingredients:

2 medium zucchinis (grated)
1 Large onion (finely chopped)
1 cup grated cheese (cheddar)
1 cup self-raising flour
5 eggs
¼ cup vegetable oil or olive oil
Salt and pepper (to taste)
200g chopped bacon.

Method:

1. Preheat oven to 180°C (350°F). Grease and line a rectangular baking dish (approx. 20x30cm).

2. Prepare veggies: Grate zucchini (squeeze out excess liquid using a clean towel or hands). Chop onions finely.

3. Mix wet ingredients: In a large bowl, whisk the eggs. Add oil and mix well.

4. Combine: Add the zucchini, onion, cheese, flour, and any optional ingredients. Season with salt and pepper

5. Stir everything until well combined.

6. Pour into prepared pan and spread evenly.

7. Bake for 30–40 minutes or until golden brown on top and firm in the middle.

8. Cool slightly before slicing into squares.
