Okpa is one of Igbo’s favorite delicacy.
It is peculiar to the people of Enugu state.
It is enjoyed by all. If you want to try it out, this is how👇🏻
Step-by-Step Instructions:
Prepare the Pot: Set a large pot of water to boil, as the mixture must go into boiling water immediately to avoid settling.
Mix Dry Ingredients: In a large bowl, combine the okpa flour with palm oil. Rub the oil into the flour until it is fully incorporated, forming a nice orange color.
Add Seasoning & Water: Add sliced fresh pepper and salt.
Gradually add lukewarm water while mixing to avoid lumps.
Achieve Consistency: Keep adding water until you get a smooth, relatively light batter (consistency should not be too thick or too watery).
Wrap the Mixture: Scoop the batter into banana leaves or nylon bags (typically used small clear nylons). Tie the nylons securely to avoid leakage.
Cook: Immediately place the wrapped okpa into the boiling water. The water should be enough to cover the wraps. Cover the pot and cook on high heat for 45 minutes to 1 hour.
Finish: Once the okpa is firm and properly formed, remove from the pot, allow it to cool down, and serve
