Egg Shortages Highlight the Urgent Need for Alternatives—And We’re Here to Help

The ongoing egg shortage in the U.S. has once again demonstrated the fragility of our food system. At Plant Origin, we see this as a wake-up call—one that reinforces the need for sustainable, reliable, and scalable alternatives to traditional animal-based products. This is exactly why we developed Exx, our plant-based egg replacer.

What’s Causing the Egg Shortage?
Over the past few years, the U.S. egg industry has faced significant disruptions, with avian influenza outbreaks forcing farmers to cull more than 150 million chickens worldwide. This drastic reduction in the laying hen population has led to soaring egg prices, with some areas seeing costs rise to as much as $9 per dozen. Even major retailers like Walmart and Kroger have imposed purchase limits, while restaurants are adding surcharges on egg-based dishes to manage costs.

Despite intervention efforts, including a $1.7 billion investment from the U.S. Department of Agriculture, experts predict that supply issues may persist well into 2025. The situation has left businesses and consumers scrambling for reliable alternatives.

Malaysian couple Seleste Tan and Mogan Anthony founded Lady Wong, a patisserie in New York City's East Village, offering traditional and modern Asian desserts such as pandan layer cake, lapis sago, kuih seri muka, and snow skin mooncakes. Drawing on their experience in Michelin-starred kitchens and blending French pastry techniques with Southeast Asian influences, they introduced New Yorkers to the nostalgic flavours of kuih muih.

What started as a pandemic project in their home kitchen evolved into pop-ups and a permanent shop. Lady Wong’s success has been recognised by publications such as The New York Times and Eater NY, which named it Best Bakery in 2022. Malaysians abroad celebrate its success, while some at home call for a renewed focus on perfecting kuih muih instead of prioritising international pastry trends.
