I made these japanese sweet, nerikiri, to represent "Quiet Gaze of Autumn".

物の哀れ (Mono no Aware) often refers to "quiet, melancholic awareness of life's impermanence".

Somewhere in my memories, many good thoughts about autumn flashed through when I made these confections.

Daylight disappears instantly in autumn. It is used as a metaphorical reminder that life's precious moments, youth, and opportunities pass by much quicker than we realize.

Today, I made a japanese sweet , nerikiri, to represent "The Golden Hour" .

In Japanese art and memory, the golden hour is almost always set at dusk like a memory from childhood. The setting sun turns the sky orange, reflecting off the water of the rice paddies and catching the wings of thousands of glittering red dragonflies (akiakane).

Swarming over golden crops, they are celebrated as the "spirits of the rice plant," signaling that a bountiful autumn harvest is ready. The feel invokes a strong nostalgic feeling of "old village" or "hometown".

《 Otsukimi 、お月見 》~和菓子 羊羹

Today, I made a japanese confection, Yokan, a jelly-like confection to represent "Otsukimi".

I made the moon in a deliberate series of moon shadows with salted egg yolk.

The yokan jelly were made with dark muscovado sugar sponsored by The Gentle Table . It was rich, bittersweet, and smoky flavour. I like to enjoy something more on the refreshing side especially in the summer.

The rabbit mother & son pair were made of sweetened white beans. I think I made the rabbits a little chubby🤣

I made a steam japanese rice cake to represent "Jade Rabbit".

The jade rabbit, with its leaping posture, is an auspicious animal sculpture or figurine that symbolizes "progress" and "good fortune."

The bottom of the confection were made of rice flour combined with fat from the egg yolk. The upper part were almost like a jelly-like confection made of sweetened white beans, composed with lemongrass ginger juice. In between, we slit in the candied chestnut to represent moon.

Very good pairing with iced tea !

Today, I made a japanese sweet box. Instead of the usual red bean or white bean fillings, this time I used Pione Grape (or better known as Black Pearl) as the fillings.

Super refreshing grapes, seedless, super cute, and very unique as a gifting. I slipped in a cute rabbit amongst the seal as a cute gift for a friend.

These gift box are only available for sale in Klang Valley as the japanese confections were made freshly upon order.

Sweet box starts at RM 68 per box of 4 hand-made nerikiri.

《 Shima Enaga Chestnut Daifuku 、島柄長大福 》

Today, I made a vanilla chestnut cream daifuku in the shape of Shima Enaga, fluffy white subspecies of the long-tailed tit found exclusively on Japan’s northern island of Hokkaido.

I use crème diplomat combined with vanilla rum infused chestnut from France to make the fillings. Very smooth taste and I used demerara sugar sponsored by The Gentle Table to make. The fluffy birds were silky and creamy texture inside. On the outisde, with the new formulation on our daifuku, the skin stays soft even on the next day in the chiller!

We will be opening orders for our popular daifuku soon. You can either chooee for the daifuku to be packed in an eco-friendly bamboo box or a reusable bento box ( as shown in the photo).

It can be gift for your very own "reward day", or even as a unique gift to your friends family.

Made this japanese confection, nerikiri, to represent "Reminiscene".

While making this condection yesterday with student yesterday, many beautiful moments came through my mind.

The other day, when I was exhausted after work, a butterfly appeared out of nowhere in my bathroom. I stared at the butterfly, but it doesn't move an inch, like showing off its beautiful wings to me.

It was on the wall for a long time, and by the time I woke up, it was gone.

It reminds me that beautiful moments can be very short, but it stays in mind forever.
