鲟鱼类在古代已作药用。《本草纲目.鳇鱼》引述陈陈藏器语云：“其肝主治恶疮疥癣，勿以盐炙食”，又在“鲟鱼”条下引述云：“其肉补虑益气，强身健体，煮汁饮，治血淋；其鼻肉作脯补虑下气；其籽如小豆，食之健美，杀腹内小虫。”据中国科学院海洋所检测：肌肉含有十多种人体必需的氨基酸，脂肪含有12.5%的“DHA”和“EPA”（亦称脑黄金），对软化心脑血管，促进大脑发育，提高智商，预防老年性痴呆具有良好的功效；软骨和骨髓（俗称“龙筋”）有抗癌因子，可完全直接食用，素有“鲨鱼翅，鲟鱼骨”之说
