What a successful air fryer class we had today for the IFC! Turned out I taught 12 people to make pepperoni chips, baked Brie, garlic butter shrimp, roasted asparagus, chicken fajitas, frittata and lemon cake with a cream cheese frosting!

Thank you Linda Vasquez for inviting me to teach your members the joys of air frying! Thank you Georgia Darehshori for opening up your beautiful home for the class.

It’s been months since Vallarta’s Air Fryer Queen has taught a class, so today I am teaching my largest one yet! Eleven students from the IFC (International Friendship Club) are attending a private AF cooking experience at the gorgeous home of Georgia Darehshori! All is set up and I’m ready to teach them 7 amazing dishes!!

Wish me luck! Hope this is like a bike and I remember how to do this 😂😂😂!

Hi everyone and apologies for my absence!

I am producing “CHICAGO The Musical” here in PV at Act2PV Theater and we open tomorrow!

It’s been a huge undertaking these past 11 weeks putting on a Broadway musical - so unfortunately I’ve not had time to post much about air frying. But I promise to do more very soon.

In the meantime, if you are in Vallarta I hope you’ll come see the show on Fridays at 6:30 and Saturdays at 9pm!

My husband brought home pork tomahawks from La Comer. Only $149 pesos (approx $8 usd) for these 2 beauties! I rubbed them with a delicious seasoning mixture and air fried them of course! Wow - heaven on a plate! Instructions below each photo!

I woke up craving French toast sticks - which are fun and easy to prep in the air fryer. The perfect after birthday breakfast! Also a great option for Xmas morning!

French Toast Sticks

Ingredients

4-5 slices of bread (slightly stale)
3 eggs
1/2 t vanilla
1/2 C milk
1/2 C white sugar
1/2 C brown sugar
1 T cinnamon

Optional toppings :
Powdered sugar, butter, berries, maple syrup

Cover air fryer tray with tinfoil than preheat to 380F

Slice bread into 3rds

Bowl 1: whisk together eggs, vanilla, cinnamon and milk

Bowl 2: whisk together sugars

Dip bread into bowl 1 - let excess egg drip off. Then dip both sides into bowl 2.

Place bread on tinfoil covered tray. Cook for 12-14 minutes and turn midway.

Plate and top with berries and maple syrup.

Air fryer steak fajitas are so flavorful and super easy to make. Clean up is a breeze too! Instructions below each photo. Made for a terrific dinner tonight!

You can use store bought fajita seasoning or make your own:

Fajita seasoning

Whisk together:

2T chili powder
4t cumin
2 t paprika
4 t garlic powder
2 t onion powder
2 t cayenne
1 t black pepper
2 t salt

My favorite way to use up turkey leftovers is to make a turkey Cobb salad. Which includes bacon and eggs made in the air fryer. Bacon instructions below

If you want a quick lunch, there is nothing better than an air fried gooey crunchy grilled cheese sandwich! Especially on my baked maple oatmeal sourdough bread! But you can use any bread you have at home. Instructions below each photo below.
