📍 Day 3: Before You Taste Mezcal, You Must Understand the Land
A 6 a.m. journey to San Luis Amatlán led us straight to the wild heart of mezcal. Hiking through agave fields, discussing sustainability, and planting young agaves with local maestro Fredo Brena—all of it deepened our respect for the land.

📍 Day 2: Science Behind the Spirits
Today, our students dove into the scientific side of agave spirits. With blind tastings to sharpen their palate and in-depth seminars on microbiology and chemistry, they learned how microorganisms and chemical reactions shape every drop of mezcal.
From Taiwan to South Africa, England to Mexico—each student brings a unique perspective, and together we’re building a new generation of agave specialists.

Yesterday marked the beginning of a 6-day immersive journey into the world of agave spirits—guided by tradition, technique, and sensory exploration.
From blind tastings and aromatic training to real-time formal Sommelier service practicum, our students are already sharpening the tools that will guide them through every drop of Agave spirits.
This year, we’re honored to welcome our 2025 Master Candidates from four continents:
