We want to share with you our poster for the 34th National Biochemistry Congress. This project aims to identify and evaluate potential decorative enzymes to enhance the stability of betalain pigments against extrinsic factors ensuring vibrant color retention in plant-based applications. With these results we can conclude that betalains are promising bioactive pigment sources for multiple industries and the identification of potential decorative enzymes to improve stability has practical consequences for plant breeding and metabolic engineering.
