For those of you who don't know, Puerto Vallarta and area was hit by Hurricane Lidia last week as a massive category 4 hurricane on October 10th. The city was without power or water for days and many are STILL without it almost a week later. But it gets worse...

Following this first round given to us by mother nature, 2 days later there was a massive landslide cutting off access to communities to the south who desperately need support AND a torrential downpour led to flash floods affecting a huge part of the city. The devastation has affected so many.

Fresh seafood is my weakness. Especially this tuna ceviche from one of my favorite beachfront restaurants. ๐Ÿ˜‹โฃ

Although the origin of ceviche is often debated, it is commonly served in ๐Ÿ‡ฒ๐Ÿ‡ฝ Mexican restaurants. Mexican tuna ceviche is made from raw fish or seafood and it is marinated or 'cooked' in fresh lime juice. Recipes and preparations vary but you might find it mixed tomatoes, onions, cilantro, avocados, cucumbers, and of course, with a basket of those crunch Mexican totopos (tortilla chips) or saltine crackers (galletas saladas).โฃ

Backstory: Last year on our summer roadtrip to Mazamitla, I found a delicious, fresh, and locally grown freestone peach at a roadside fruitstand on the edge of Lake Chapala. My hometown (Kelowna, BC) is one of the few areas in Canada where tree fruits are grown (cherries, apricots, plums, peaches, apples, pears) and I always took them for granted.โฃ
