Our chefs at Coco Bodu Hithi are back with another recipe for you to try at home! These Beer-Battered Onion Rings are the perfect snack to try any time of the year.

Ingredients:
1 large Spanish onion, cut into 1/2 inch slices and separated into rings
60g cornflour

For the batter
250g all-purpose flour
30g cornflour
1/2 tsp baking powder
1/2 tsp salt
250ml pale ale
oil for frying

Method:
- Preheat the deep fryer to 190°C
- Place a cooling rack on a baking tray or line a baking tray with paper towels.
- In a large bowl, toss the onions rings in the cornflour to coat well. Set aside.

For the batter
- In a large bowl, mix together the flour, cornflour, baking powder, and salt. Whisk in the pale ale.
- Using your fingertips or chopsticks, dip the onions rings in the batter.
- Shake off the excess batter.
- Working in batches of 3-4, deep fry for about 3 minutes, turning halfway through cooking.
- Drain the excess oil by placing the fried onion rings on the prepared baking tray. Season lightly with salt, and serve immediately with desired dips and sauce .

Chef Carlo is developing a range of fish-based dishes in many ways that will be added to our menus- both in an international twist and even having some Maldivian Elements in the cooking as well. He is looking to wow and impress the guests with his many culinary delights and bring dining at Hideaway to the next level.
