🇻🇳 Vietnamese Shaking Beef (Bò Lúc Lắc)
🍽️ Serves: 4
⏱️ Total Time: 30 minutes
Prep Time: 15 minutes

Cook Time: 10–12 minutes

Rest Time (marinate): Optional, 15–30 minutes for more flavor

🧂 Ingredients
For the beef:
1 lb (450g) beef sirloin or ribeye, cut into 1-inch cubes

3 cloves garlic, minced

1 small red onion, sliced

1 tablespoon oyster sauce

1 tablespoon soy sauce

1 tablespoon fish sauce

1 tablespoon sugar

1 tablespoon rice vinegar or lime juice

1 teaspoon black pepper

2 tablespoons vegetable oil (for searing)

1 tablespoon unsalted butter (optional, for richness)

For the dipping sauce:
1/4 teaspoon salt

1/4 teaspoon black pepper

1 wedge of lime

For serving (optional):
Cooked jasmine rice or watercress/tomato salad

🍳 How to Cook It
Step 1: Marinate the Beef (Optional but Recommended)
In a bowl, combine beef cubes with garlic, oyster sauce, soy sauce, fish sauce, sugar, vinegar (or lime juice), and black pepper.

Mix well and let marinate for at least 15–30 minutes (can go up to a few hours in the fridge).

Step 2: Prepare the Dipping Sauce
Mix the salt and pepper in a small dipping dish.

Add a squeeze of lime juice when ready to serve.

Step 3: Sear the Beef
Heat a large pan or wok over high heat until very hot.

Add the vegetable oil and swirl to coat the pan.

Sear the beef cubes in a single layer (in batches if needed). Let them brown without moving for 1–2 minutes, then shake the pan or toss the beef to sear all sides—hence the name "shaking beef."

Optional: Add butter at the end of cooking for extra flavor.

Step 4: Sauté with Onions
Add the red onions and sauté for 1–2 minutes until slightly soft but still crisp.

Step 5: Serve
Serve immediately with jasmine rice or over a bed of watercress and tomatoes.

Dip each piece of beef into the lime-pepper-salt sauce for authentic flavor.

🍣 Perfect Hot Smoked Salmon Recipe
📝 Ingredients (Serves 4-6)
1.5 lbs salmon fillet (skin-on for better results)

1/4 cup brown sugar

1/4 cup kosher salt

2 tbsp black pepper (freshly cracked)

1 tbsp paprika

1 tsp garlic powder

1 tsp onion powder

1/2 tsp dried thyme

1/2 tsp dried dill (optional)

Wood chips for smoking (e.g., alder, hickory, or applewood)

🍳 Instructions
1. Prepare the Brine
Mix the brine: In a small bowl, combine brown sugar, salt, black pepper, paprika, garlic powder, onion powder, thyme, and dill (if using).

Apply the brine: Coat the salmon fillet evenly with the brine mixture. Be sure to press the seasonings into the fish.

Refrigerate: Place the seasoned salmon on a rimmed baking sheet and cover with plastic wrap. Let it sit in the refrigerator for 2-4 hours. This will draw out moisture and firm up the fish, allowing it to absorb the seasoning.

2. Rinse and Dry
After the brining period, remove the salmon from the fridge.

Rinse the fish under cold water to remove excess salt and sugar. Pat it dry with paper towels.

Let the salmon air-dry for about 30 minutes on a rack or on a clean towel. This will help the salmon develop a nice pellicle (the sticky outer layer), which is key to getting a good smoke flavor.

3. Prepare Your Smoker
Preheat your smoker to 225°F (107°C).

Soak your wood chips in water for at least 30 minutes to prevent them from burning too quickly.

Add the soaked wood chips to the smoker according to the manufacturer's instructions.

4. Smoke the Salmon
Place the salmon on the smoker grates, skin-side down. Make sure there's space between the fillets for proper airflow.

Smoke the salmon for 1.5–2 hours at 225°F (107°C), or until the internal temperature of the fish reaches 140°F (60°C).

If you prefer a more pronounced smoky flavor, you can smoke the salmon for a bit longer (up to 3 hours), but be sure to check for the right internal temperature.

5. Rest and Serve
Remove the smoked salmon from the smoker and let it rest for a few minutes before serving.

If desired, flake the salmon or serve it in whole pieces.

Enjoy the smoked salmon as is, or pair it with crackers, bread, or a fresh salad.

🍽️ Serving Suggestions:
Classic bagel topping with cream cheese, capers, and red onion

Serve with roasted vegetables or a simple cucumber salad

Add to pasta or use in a smoked salmon dip

⏱️ Total Time:
Prep time: 10 minutes

Brine time: 2–4 hours

Smoking time: 1.5–2 hours

🍲 Classic Jewish Chicken Soup (Chicken Soup with Matzo Balls)
📝 Ingredients (Serves 6-8)
For the Soup:
1 whole chicken (about 3-4 lbs), cut into pieces

2 large carrots, peeled and cut into large chunks

2 celery stalks, cut into large chunks

1 onion, peeled and halved

4-5 cloves garlic, smashed

1-2 sprigs fresh parsley

1-2 sprigs fresh dill

2-3 bay leaves

1 tsp whole peppercorns

Salt to taste

10 cups water (enough to cover the chicken and veggies)

For the Matzo Balls (optional):
1 cup matzo meal

2 large eggs

1/4 cup vegetable oil or chicken fat (schmaltz)

1 tsp salt

1/4 tsp white pepper

1/2 tsp garlic powder

1/4 cup water

Fresh dill or parsley for garnish (optional)

🍳 Instructions
1. Make the Soup:
Prepare the chicken: In a large stock pot, add the chicken pieces, carrots, celery, onion, garlic, parsley, dill, bay leaves, and peppercorns.

Add water: Cover the ingredients with about 10 cups of water (or enough to fully cover everything).

Simmer: Bring to a boil over medium-high heat. Once boiling, reduce heat to low and simmer for about 1.5 to 2 hours, skimming off any impurities or foam that rise to the top.

Season: Add salt to taste about halfway through the cooking time.

Strain: Once the soup is ready, remove the chicken and vegetables, and strain the broth into another pot to remove solids.

2. Make the Matzo Balls:
In a medium bowl, combine the matzo meal, eggs, oil, salt, pepper, garlic powder, and water. Mix gently until well combined.

Cover and refrigerate for about 30 minutes to let the mixture firm up.

Bring a separate large pot of salted water to a boil.

Wet your hands, and gently form the matzo meal mixture into balls about the size of a walnut.

Carefully drop the matzo balls into the boiling water. Reduce heat to low, cover, and simmer for 20-25 minutes, until they are cooked through and have expanded in size.

3. Assemble the Soup:
Add the strained broth back into the pot and bring it to a simmer.

Shred the chicken into bite-sized pieces and add it back to the pot.

Add in the matzo balls once they are cooked.

Taste the soup and adjust seasoning if needed.

Serve hot, garnished with extra fresh parsley or dill if desired.

🍽️ Serving Suggestions:
Serve with a side of challah bread or crusty rolls for dipping.

If you like a little extra flavor, you can drizzle a little bit of chicken fat (schmaltz) over the top.

⏱️ Total Time:
Prep time: 15 minutes

Cook time: 2.5–3 hours (including the matzo balls)
