✏️ The aim of the course is to provide bachelor’s and master’s level students with comprehensive theoretical knowledge and practical competencies in animal rearing technologies within small farm systems, as well as in production processing technologies for the transformation of animal-derived raw materials into high-quality products.
🐮 The course focuses on animal rearing technologies in small farm systems, quality assessment of animal-derived raw materials, and their use in food processing at small-scale agro-food enterprises. It highlights key management factors such as husbandry systems, feeding, and animal welfare that affect raw material quality at the primary production stage. The course is grounded in recent scientific advances in milk, meat, poultry, and fish production, food biotechnology, and modern analytical methods, providing students with practical experience in product quality evaluation and application of the “from farm to fork” approach.
💡 Upon completion of the course, students will have improved knowledge and practical skills in animal rearing technologies within small farm systems and in production processing technologies for the preparation of high-quality animal-derived products.
