The cooking class begins as an authentic Saint Lucian breakfast is prepared and introductions are made. Chef Herbert’s and the “quartier’s” natural charm and friendliness will make you feel welcome. Then, get comfortable in your own place outfitted with your very own coal pot and canawi (also known as canari) both traditional Creole pottery and still used around Saint Lucia in everyday life. The coal pot, a clay vessel used to cook on using charcoal, and canawi which is also made of volcanic clay, hand-built, dried and baked in an open bon-fire, serves as a pot. Our local team will educate and entertain you as they showcase the ingredients for the day and start the class. In this class you will be right in the middle of a warm, friendly, active, vibrant working farm and will meet many of the locals like Canice and his family….and many more, we are sure.
