Irene Alphonse makes traditional Coalpots in Choiseul, St. Lucia
Irene Alphonse raises her pickaxe, cutting chunks of brown clay from the hill beside her Choiseul home. In the shade of a lean-to studio, she beats and hand-forms the clay into round-bottomed canawí — the Creole word for cooking pots — and flaring coal pots, which are the vessels of St. Lucia’s one-pot cuisine.
Near Vieux Fort, Mary Magdaline Nelson chops wood to make fuel. “Red mangrove makes the strongest, longest-burning charcoal,’’ says the 69-year old, who is raising 10 children on her own, and who learned charcoal-making from her mother. Nelson’s precisely angled cuts allow the plants to regenerate. She’s been sustainably reusing this mangrove forest for 52 years.
Although St. Lucians enjoy modern conveniences as we do, charcoal-fired coal pots are as ubiquitous in their homes as barbecue grills are in ours. So are one-pot meals, handed down from generations of West Africans, Caribs, and Amerindians.

This pear-shaped fruit grows a Cashew nut out the end!! One nut per pomme. Amazing!!
The luscious Cashew Pomme (apple) dangles her pear-shaped fruit throughout the Caribbean islands. The medium sized fruit is delicious and nutritious. It provides essential minerals and a high concentration of vitamin C (5 X that of oranges. The fleshy Pomme is prized for its juice that is slightly astringent; is made into sauces, dessert stews and puddings, and candied for preservation.
Did you know?
Only one single Cashew nut grows at the bottom of the pomme, shaped like a hook. In a future post Chef Herbert will show you how to dry and roast the Cashew nuts over an open fire. The juice is harvested and enjoyed fresh or made into wine locally. The pommes begin decaying almost immediately after the fruit is harvested and are usually left on the ground as fodder for pigs and cattle.
Recent research indicates that the juice might help to burn body fat in people. I wish all food came with a natural fat balancer! Think about it…put the calories in and take them out all in one fruit!

Make your own Spiced Coconut Cake at home or cook like we do at The Little Lucian!! Authentic..for sure!
Spiced Coconut Cake
3 cups All-purpose flour
1 1/2 to 2 cups Brown sugar
1 1/2 cups Freshly grated coconut or one bag if purchased
1/4 c for sprinkling on top
3 tsp Baking powder
1 tsp Baking soda
1/2 tsp Allspice (optional)
1 T Ground Nutmeg, 2+ T fresh grated
3 T Cinnamon
1/2 tsp Salt
2 Eggs, well beaten
2 cups Coconut Milk (1 can)
1/2 cup Butter, melted or coconut oil
1 tsp Vanilla Extract
1/4 c St Lucia or any coconut rum(too delicious to be optional lol)
Sprinkle 1/4 c of shredded coconut on top and allow to brown.
Preheat oven to 350 F
In a large bowl mix together all dry ingredients.
Beat eggs and coconut milk together and add melted butter/coconut oil.
Add vanilla and rum .
Add above liquid to bowl with dry ingredients mix until blended. Don't over stir or you will have a heavy tough cake. Place batter in a greased oblong baking dish or use parchment paper(about 13″ x 8″) Bake for 1 hour or until cooked in center.
Cool and slice or cut into squares.
