Fresh young ginger has arrived from my hometown.
Young ginger is only in season for a short time, so every year, I prepare enough to enjoy throughout the year.
When pickled in sweet vinegar, it naturally turns a beautiful pink.
Japanese Pickled Young Ginger
Ingredients
• 500g young ginger
• 300ml vinegar
• 130g sugar
• 15g salt (3% of the weight of the ginger)
How to make
1. Thinly slice the young ginger and spread it in a colander.
2. Pour boiling water over the ginger.
3. Sprinkle with salt, mix well, and let it sit for a while.
4. Add the vinegar and sugar to a container and mix.
5. Squeeze out the excess moisture from the ginger and add it to the sweet vinegar mixture.
6. Let it cool and watch it naturally turn a beautiful pink.
This is a simple seasonal tradition that I look forward to every year.
