I’ve missed the winters and soups 😍
Here is my desi-fied version of Chinese Chicken Corn soup...follow it to the dot and its gonna be smashing!

Ingredients:
- 1/2 cup Chicken Mince (because I’m too lazy to shred it)
- 1 cup chopped (not pureed) tinned corn (chop this in the food processor for 2-3 seconds)
- 1/4 cup soy sauce (please use kikkoman, suree or anything not local 😂)
- 1/8th cup (1/4th ka half) chinese chili sauce. (Shangrila or anything local works here)
- 1/2 tsp black pepper
- 1 tbsp ginger garlic paste
- Salt to taste
- Cornstarch to thicken
- 2 eggs
- Spring onions to garnish (optional)

Heat up some oil (1 tbsp) and add ginger garlic paste to it. Brown it and add the chicken mince. Then cook it for a minute break up the mince Add 1/4 cup of water and add the corn.

Now add 2 L of water to this and bring it to a boil. Add the seasonings which are soy sauce, chilli sauce and pepper.

Beat two eggs and add it to the soup. Bring it to a boil and thicken with a cornstarch slurry. Adjust salt by tasting. Add spring onions, mix in and serve!

Hi everyone! Hope you’re well. Have been busy so wasn’t able to post much.

Sharing the recipe of British style Fish and Chips today. Hope you’re going to try it. I’ll wait for your feedback 😁

Ingredients:

Fish:
1 kg cut into thick slices. Use any fish you like but it should be without bones.
1/4 tsp salt
1 clove Grated garlic or 1/4 tsp garlic powder

Chips:
1 kg potatoes
1/2 tsp salt
1/4 tsp garlic powder
1/2 tsp paprika powder
1/4 tsp oregano

Batter:
1 cup flour
1/2 tsp baking soda
3/4 tsp salt
1 tbsp vinegar
Ice cold water (take a cup of water and add 1/2 a cup of ice to it. Let it sit for 5 mins and then strain)

Dipping sauce:
4 tbsp mayonnaise
A splash of milk (to make a runny consistency)
1 grated cucumber pickle
1/4 tsp pepper

Method:

Marinate the fish with the mentioned spices and set aside in a strainer. This will drain all the excess water and ensure the fish is dry before frying.

Prepare the chips. Cut the potatoes, put a pot of water on the stove and bring it to a boil. Add the chips to it and set the timer for 2 mins. Make sure the heat is high while doing this. Once 2 mins have passed, strain the potatoes and spread them out. Let them cool. Now add the spices to the chips and deep fry. Alternatively, you can add 2 tbsp oil to them and bake them at 190C till golden brown.

Mix the dry ingredients of the batter, add the water, make sure its a thick batter. Add the vinegar and stir. This will activate the baking soda and create bubbles in the batter.

Dip the fish in the batter and deep fry in hot (not warm) oil. Take out the fish on a kitchen paper in a wide strainer (the strainer will allow air to pass under the fish so it will not get soggy)

For the sauce:
Mix the mayo, pepper and milk. Add the grated pickle. Give it a good stir.

In my opinion, A dip / chutney completes the meal. There are so many variants of a dip, creamy, sweet, spicy, sour... each elevates your dish in its own way.

Today I have for you a sweet and spicy dip to go with your salads, crisps and meats.

Mango Sriracha Dip

1 cup mango puree
1 tbsp sugar
1/4 tsp grated ginger or a pinch of ginger powder
A pinch of salt
2 tbsp apple cider vinegar
2 tbsp sriracha sauce

Cook everything together and we are done 😆

Can you believe this bread has no sort of flour...?!?

The main ingredients of this bread are peanut butter and eggs! Yes, its that simple and easy to whip up. A great alternative to regular bread if you are on a keto / low carb diet as well.

I made a lot of this bread during lockdown when I couldn’t find flour in the market because I think peanut butter was not a priority for people during those days 😂

Korokke (Japanese Croquettes)

Korokke is the Japanese name for potato croquettes. The outside of Korokke gives a wonderful “Crunch!” as you bite into it... the inside is a smooth mashed potato with the perfect balance of beef mince and vegetables.


You will need:
- 500g beef keema
- 2 kg potatoes (boiled and mashed)
- 1 big bell pepper (or u can use three different colors)
- 1/4 cup green onion
1/2 cup shredded carrots
2 tbsp soy sauce
1 tsp garlic powder
1 tsp white pepper
1/2 tsp black pepper
1 egg
Mozzarella cheese cut into cubes (1/2 cup)

For coating:
2 eggs (add salt in eggs)
1 cup maida
2 cups breadcrumbs

Fry the keema and break it apart. Add the soy sauce, garlic powder, black and white pepper and cook till its dry. Add the vegetables and cook for 5 mins then turn off the flame.

Cool down the mixture and add it to the potatoes. Mix well and check salt. If u want it more spicy, feel free to add more pepper. Traditionally, its not spicy.

When you are shaping the croquettes, add cheese in the center. This is optional, if you dont feel like it, skip it. While coating, do it in this order > maida > egg > breadcrumbs.

Fry on a medium high flame. No need to dee fry. Shallow frying is also fine. You can freeze these after coating to use at a later day!

The first time I had these was at a fast food chain here and I was totally blown away by the combination. The rice buns were so satisfying and delicious!

These burgers have teriyaki chicken with a sriracha mayo sauce. The recipe consists of only 4 ingredients:
1. Chicken
2. Teriyaki Sauce
3. Rice
4. Sriracha Mayo

Calling all chocolate lovers out there!

I have for you a dessert pizza. Its a nutella, marshmallow and dried strawberry pizza 😋 sound weird? Don’t worry, I promise you will LOVE IT!

Here’s the recipe:
1 cup flour
1 tbsp yogurt
1 tbsp butter
1tsp yeast
1 egg
A pinch of salt and 1 tbsp ground sugar

Knead all of this and let it rise.

Now add 1/4 cup cocoa powder and mix it in. If its too dry, add some water to make a smooth dough. Roll this out into a thin crust pizza base, poke holes with a fork and brush with 3 tbsp butter. Bake at 180C till cooked through.

Once slightly cooled down, spread nutella(u can substitute with any chocolate spread u like), add marshmallows, almonds and dried strawberries. Fresh fruit tastes good too. Cut and serve!
