Matcha 🍵 Tiramisu with Berries & Sake 🍶
Ingredients (10~12 *small servings)
* 250g mascarpone
* 200g heavy cream
* 50g sugar
* 2 egg yolks
* 150g mixed berries or strawberries, chopped (frozen works well too!)
* 1/2 tbsp honey
* 1/2 tsp lemon juice
* 3 tbsp sake
* 1 tbsp matcha powder
* 30g hot water (80°C / 175°F)
* Ladyfingers
* Lots of matcha for dusting

Instructions
1. Mix chopped berries with honey and lemon juice.
2. Whisk matcha with hot water, then mix in the sake. Soak the ladyfingers really well.
3. Whisk egg yolks and sugar until pale. Mix in mascarpone until smooth.
4. Whip cream to soft peaks and fold into the mascarpone mixture.
5. Layer soaked ladyfingers, berries mixture, and cream, then repeat twice.
6. Chill for at least 3 hours.
7. Dust generously with matcha before serving!
There are amazing food experiences all over the world, but I love tiny Japanese restaurants with just a few seats 🍶
My favorite part is talking with the chef who truly loves food — it almost feels like a cooking class. And with omakase, you don’t even have to choose anything. They just serve you the best of the best 🥳

I meet travelers from around the world every day, so I knew not many people make it up to Tohoku… 🥺 - only 1.5–2% travel north 🗾
If you want to truly feel the power of nature, Tohoku is the place 🌊 The onsen there feel wild and untouched in the best way possible ♨️ And honestly, Tohoku is a region you should explore by car 🚗 It’s huge, full of hidden places, and meant for slow travel🦀🐟🐎🐙🌊🤳⛰️🚠

They’re college students from all across the U.S., each studying at different universities. They just arrived in Japan a few days ago and are about to spend the next semester here 👏🏻
I’m so happy they chose 🎌 and I really enjoyed making onigiri 🍙 together with them 🫶🏻
When I was around their age, I had the chance to study abroad in the U.S., and I’m truly grateful for that experience—it made this moment feel even more special 🤗

Our weekend trip to the other week really made me feel like I experienced the true spirit of omotenashi 👐🏻
It comes from that very Japanese sense of “reading the room”—quietly understanding what a guest might need and going the extra step to make it happen. That’s what real hospitality felt like to me.
There are so many ways to travel, but if you come to 🇯🇵, I really think a stay at a ryokan in nature is something you shouldn’t miss—to truly understand omotenashi.
I’d honestly say skip Hakone though 😅 and go somewhere a bit more local and peaceful. Definitely add it to your itinerary 🌿🥳😎
