Miso-glazed eggplant is a simple Japanese home-cooking favorite. 🍆

The eggplant becomes soft and tender, while the miso glaze adds a rich balance of sweet and savory flavors.

Ingredients:

1 Eggplant
1 Tbsp Sesame oil

Miso glaze:

2 Tbsp Miso
1 Tbsp Mirin
1 Tbsp Sake
2 tsp Sugar
Toasted sesame seeds, as needed

Pan-fry the eggplant, brush it with the miso glaze, then cover and cook for another 2–3 minutes.

Finish with shredded dried red chili, if you like.

One of the things I love most about Japanese food is discovering the stories behind the ingredients. 🇯🇵✨

Recently, my family and I visited Kinbue Shoyu Park (金笛しょうゆパーク) in Saitama, where we learned how traditional Japanese soy sauce is made.

We saw the process behind this essential Japanese seasoning, tasted different kinds of soy sauce, and discovered how much the flavor can change depending on how it’s made.

And of course… we had to try the soy sauce ice cream! 🍦😋

Experiences like this always remind me that Japanese cooking is about so much more than recipes.

The more you understand the ingredients, the more you can appreciate the food. 🍚

This is something I also love sharing with guests in my cooking classes in Tokyo — not just how to cook Japanese food, but the culture and stories behind it.

One of my favorite moments is seeing everyone’s reaction when they take the first bite.
