Handy tip for curries. If you freeze your ginger its a lot easier to grate straigh from freezer, stays fresh and you dont even have to peel it.

Carrot and Pineapple Muffins
Ingredients
• 100g/4oz plain flour
• 100g/4oz plain wholemeal flour use all plain if you don’t have wholemeal
• 1 tsp baking powder
• ¾tsp bicarbonate of soda
• 1½ tsp ground cinnamon
• 1 tsp ground ginger
• 1 tsp grated stem ginger in syrup and 1 tsp syrup (leave out if you don’t have)
• ½ tsp salt
• 150ml vegetable oil
• 50ml natural yogurt
• 100g soft brown sugar or caster sugar
• 2 eggs
• 120g finely grated carrots
• 225g/8oz tinned crushed pineapple, semi-drained (you can use fresh if you have it a ¼ of a small pineapple chopped)
• 100g/4oz mixed sultanas or just whatever dried fruit you have
Method
1. Preheat the oven to 180C/350F/Gas 4.
2. Sift together the flours, baking powder, bicarbonate of soda, cinnamon and salt and mix well. Beat the oil, sugar and eggs until well blended. Add the grated carrots, crushed pineapple, yogurt and sultanas. Gradually add the flour mixture, beating with a wooden spoon just enough to combine all the ingredients.
3. Pour the batter into muffin trays lined with paper cases and bake for 25 minutes. Cool on a wire rack.

Easy Pizza Flat bread recipes
This will make quite a few flat breads depending on the size you roll them.
If you want to make pizza out of it do 500g S/R flour and 250ml water.
Flat Breads
• 300g S/R flour
• 150 natural or greek yogurt
• ½ tsp salt
• 1 tbsp olive oil
• Extra flour for kneading
Easy Tomato Sauce
• 1 can chopped tomatoes
• 1 heaped tsp of dried oregano or Italian mixed herbs
• 2 tsp red pesto
• 1 tsp sugar
Put all the ingredients for sauce in a pan and simmer to reduce for 20 minutes. Blitz in a blender or with hand held soup blender. If you don’t have one you can use as it is.
Method
1. Sift flour into a bowl add the salt olive oil and yogurt or water.
2. Knead for 5 minutes and rest for 20 minutes.
3. Roll out onto a floured surface and place in a dry pan over a medium heat turn over when starts to blister and leave for one minute.
4. Spread over the tomato sauce and sprinkle cheese and toppings of your choice.
5. Place in a preheated oven 180 C and place on a tray. Drizzle with a little olive oil and cook for five minutes.
6. If you are making larger pizzas roll out and place on a baking tray add you sauce then toppings and bake for 10-12 minutes.
(If you don’t have or can not get self raising flour use plain with a heaped teaspoon of baking powder) 2 teaspoons for the larger pizzas.)

Good Morning good people. I hope you are all keeping safe and well.

For the next few weeks I am going to post a couple of easy recipes and tips each week so that you can either do on your own or get the kids involved. This is a life skill that all and adults need so this is a perfect time to get the family involved in creating easy child and adult freindly dishes.

After a very exciting 9 months Beanie Chefs start back on the Saturday 05th of September and Sunday the 06th yet to be confirmed. I have a few spaces left for Saturday the 05th if you would like to book please email me.
