g handmade pasta tradition alive. We’ll accompany you step by step in the various stages of pasta production: from mixing flour&eggs, to cutting different shapes. We’ll show you how to cook and we’ll eat together our masterpieces. Our proposals are Traditional Handmade pasta-Vegan & Vegetarian.
3 New cooking classes ideas, inspired by the colors of the Italian flag, in 3 different locations between Modena&Bologna. Our SPECIAL Courses paired with Traditional Balsamic Vinegar and with Parmigiano or Our Traditional breads like Tigelle, Gnocco fritto or Focaccia with Parma ham. 🌼Happy International Women’s Day!

Today we're celebrating with a dish that’s perfect for the occasion: Pasta Mimosa.
This creamy ricotta and Parmigiano pasta is inspired by the mimosa flower, the symbol of Women’s Day in Italy.
The silky saffron sauce and the crumbled egg yolks on top recreate the bright yellow mimosa blossoms, simple, beautiful, and full of flavor.

📝Save this recipe for your next pasta night!

Ingredients
• 320 g Farfalle
• 200 g whole milk ricotta
• 50 g grated Parmigiano Reggiano
• 4 eggs
• 2 packets saffron powder
• 3 sage leaves
• 1 onion
• extra-virgin olive oil, as needed
• salt, to taste

Instructions
1. Place 2 eggs in a small saucepan with cold water. Bring to a boil and cook for 9 minutes. Drain, cool under running water, peel them, cut in half, and remove the yolks. Set the yolks aside.
2. Crack the remaining eggs into a bowl and lightly beat them with a fork.
3. Add the sieved ricotta and the grated Parmigiano.
4. Mix well until you obtain a smooth and creamy mixture.
5. In a large pan, sauté the finely chopped onion with a drizzle of extra-virgin olive oil until soft.
6. Cook the pasta in plenty of lightly salted boiling water. Drain “al dente” and transfer it directly to the pan with the onion.
7. Add a splash of pasta cooking water, pour in the egg mixture, and toss well to coat the pasta.
8. Dissolve the saffron powder in ½ glass of hot water and add it to the pasta.
9. Mix everything well and add the chopped sage leaves.
10. Plate the pasta, finish with the crumbled hard-boiled egg yolks and extra grated Parmigiano.

🍲 ZUPPA IMPERIALE BOLOGNESE

❄️With the first snowfall and chilly weather, what could be better than a bowl of Zuppa Imperiale?
This is a traditional “minestra” from Bologna made with delicious, fluffy Parmigiano Reggiano cubes that are gently cooked in hot broth. Have you ever tried it?

📝Here’s the recipe, let us know if you like it!

Ingredients - Serves 4
- 100 g butter
- 4 medium eggs
- 100 g semolina flour (for a gluten-free version, use gluten-free flour)
- 100 g Parmigiano Reggiano, grated (36 months aged)
- 1 pinch nutmeg
- 1 teaspoon salt
- 1 liter beef broth (for a vegetarian version, use vegetable broth)

Instructions
1. Melt the butter in the microwave and let it cool completely.
2. In a bowl, whisk the eggs by hand. Add the Parmigiano, semolina, melted butter, nutmeg, and salt. Mix until you get a soft and airy batter.
3. Line a rectangular baking pan (about 16 x 21 cm) with parchment paper. Pour in the batter and spread it evenly.
4. Bake in a preheated oven at 170°C (340°F) for about 20 minutes, or until the surface is lightly golden.
5. Remove from the oven and let it cool completely.
6. Place the baked mixture on a cutting board and cut it into small cubes, about ½ cm each.
7. Cook the cubes in boiling broth for about 2 minutes, then serve hot.
