Il REFRI si e recato in vacanza a Bologna. Li ha cenato in veste di BEFRI all'Adal, a di qui seguito troverete l'analisi tecnica della nostra esperienza.
Rome Ethiopian Food Research Institute (REFRI) took a vacation to Bologna. There, we dined as BEFRI at Adal, and below is technical analysis of our experience.

È superfluo ricordare che essere membro del REFRI significa fare un lavoro innovativo, potente, osiamo dire anche pericoloso. Esplorare nuovi territori richiede il fare esperienza acque ed alimenti serviti in luoghi fino a quel momento sconosciuti ad amici o nemici. Ciò richiede nervi d'acciaio e lucidità, come quelli necessari a completare un viaggio di mille miglia percorse al buio. Ci viene spesso chiesto: come si fa a mantenere la concentrazione in mezzo ad un lavoro così faticoso?
Il grande esploratore americano Clark Griswold una volta disse: "se tutto fosse come a casa, non ci sarebbe alcun motivo per lasciarla". Parole sagge, che REFRI non solo mette in pratica, ma consiglia anche a ciascuno di noi di considerarle profondamente. Pertanto, di volta in volta lasciamo le nostre case, per avventurarci in nuove aree, nuovi luoghi, ed anche nuove cucine, per rigenerare noi stessi ed affinare le nostre menti già così potenti. È per questo motivo che abbiamo deciso di prenderci una vacanza recandoci presso Adal, a Bologna (Adal Ristorante Africano, Via Vasari, 7, 40128 Bologna – 051.37.49.91 - www.ristoranteafricano.it), come una sorta di "BEFRI", ma considerato che c'è solo un ristorante africano nella città di Bologna, abbiamo ritenuto quest'esperienza semplicemente una necessaria vacanza del REFRI.
Adal ha richiesto che facessimo una prenotazione. Proprio noi? Il REFRI?! Non dovrebbero i proprietari celebrare il nostro arrivo con erbe profumate e danze? Ma noi del REFRI non discriminiamo per ignoranza o mancanza di ritegno e riconosciamo che, come scienziati - addestrati, esperti e talentuosi come siamo - non possiamo pretendere la stessa accoglienza delle star del palcoscenico e dello schermo. Pertanto, abbiamo umilmente fatto la nostra prenotazione, senza rivelare la nostra vera identità, e ci siamo presentati per il nostro pasto.
A prima vista l'esterno, che si trova in una stradina secondaria, è quasi misterioso, un mistero che aumenta quando si entra dalla porta principale e si trova una lunga scalinata. Il nostro team scientifico ha affrontato questa scala con una certa trepidazione, incerto su ciò che lo attendeva. Abbiamo trovato una struttura ben ornata, accogliente e vuota, il che ci ha indotto a mettere in discussione la necessità della nostra prenotazione. Ma poco dopo il ristorante si affollato di turisti affamati, certamente provenienti da altri EFRI sparsi in tutto il mondo.
La musica ci è parsa strana, ed uno di noi ha osservato "Il posto è bello. Un po' troppo giallo forse?" Ma nel complesso, anche in considerazione questi nuovi attributi culturali - che ci si possono aspettare quando si viaggia - e anche la scioccante presenza sul tavolo di una forchetta e coltello (l'orrore!) È stato in generale molto piacevole. Ci siamo sentiti come in riposo lungo la riviera francese, o sdraiati su una spiaggia di Tahiti, anche se le nostre carriere ci hanno tenuti troppo occupati per godere questi luoghi.
Il cibo in sé è stata un'esperienza curiosa: assaggi di pane dolce italiano servito in un cestino all'inizio del pasto, sia come antipasto che da utilizzare come Injera, un Veggie Combo servito con riso e cous-cous (ciò ha reso a volte necessario l'uso della forchetta, sicché uno di noi ha chiesto con un senso grande di colpa: "Oh mio dio sto usando una forchetta .... posso?" Ma questa situazione sconvolgente è stata alleviata dal fatto che il menu è africano e prevede pertanto piatti da tutto il continente, perciò la trasgressione è perdonata.
Il Veggie Combo (quasi sufficiente per una persona, ma non del tutto, essendo questo argomento motivo di discussione profonda e dettagliata all'interno del team) è stato un interessante mix di piatti diversi: verdure tagliate grosse (patate, zucchine, carote) con una ricca salsa di pomodoro; la combo carote/patate/fagiolini che siamo abituati a vedere, lenticchie gialle e bieta saltata in padella. L'abbiamo trovato non piccante e molto rinfrescante. Vale il viaggio interminabile per raggiungere questo stato di grazia.
Come per molte vacanze, questa è stata costosa per gli standard di casa, ma nonostante ciò, siamo stati in grado di rilassarci. Subito dopo ci siamo sentiti mentalmente rinfrescati, emotivamente ispirati, e scientificamente rinvigoriti.
Si prega di notare: Adal è chiuso il lunedì, perciò dovrete gustare l'immenso piatto di cous-cous altrove, in quel giorno. Consigliamo Adal a qualsiasi membro del SEFRI, REFRI, o altro EFRI in cerca di un rifugio per calmare l'anima e prepararvi ad affrontare il peso del mondo con le pesanti responsabilità del vostro lavoro quotidiano che beneficia tutta l'umanità.

Needless to say, being a member of REFRI means doing groundbreaking, powerful, dare we even say dangerous work. Exploring uncharted waters so to speak, requires sampling those waters and the foods that are served alongside them in places previously unknown to friend or foe. This requires nerves of steel and clarity like that required to complete a journey of a thousand miles traveled in the dark. We are often asked: how does one maintain such focus amidst such grueling work?
The great American explorer Clark Griswold once said "if everything were like home, there would be no reason for leaving." Wise words, and ones which REFRI not only heeds, but advises each of us to consider deeply. Therefore, we do leave our homes from time to time, venturing into new areas, places, even cuisines, for the sake of refueling our inner selves and sharpening our already powerful minds. It was for this reason that we took a vacation of our own, attending Adal in Bologna Italy (Adal Ristorante Africano, Via Vasari, 7, 40128 Bologna (051.37.49.91; www.ristoranteafricano.it), in essense as a "BEFRI" of sorts, but given that there is only one African restaurant in the city of Bologna, we considered this simply a much-needed REFRI vacation.
Adal requested that we make reservations. Us?! REFRI?! Should the owners not praise our arrival with scented herbs and dancing? We at REFRI do not discriminate based on ignorance or lack of decorum and we do recognize that as scientists - trained, skilled, and talented as we may be - that we do not command the same response as stars of stage or screen. Therefore, we humbly made our reservations unannounced as to our true identity, and arrived for our meal.
Upon first arrival, the exterior, found down a side street, is almost mysterious, a mystery deepened upon entering the front door and finding a long staircase. Our scientific team approached this staircase with some trepidation, unsure as to what lay ahead. We found a well adorned establishment which was welcoming and empty, making us question the need for reservations. Soon after the restaurant filled with eager vacationers, obviously those from other EFRI's around the world.
We found the music strange and one of us noted "The place is nice. A little too yellow maybe?" But overall, even given these new cultural attributes - to be expected when traveling - and also the shocking placement on the table of a fork and knife (the horror!) it was most enjoyable overall. We found it to feel much like finding oneself in repose along the French Riviera, or resting on a beach in Tahiti, though we have been too busy due to our extensive careers to enjoy such places.
The food itself was a curious experience: chunks of sweet Italian bread served in a basket at the start of the meal both as an appetizer and to be used injera-like throughout; a veggie combo served with rice and also cous cous (thus necessitating the need for a fork at times, and one of us asked with a large sense of guilt: "Oh my god I'm using a fork....can I?" But this shocking situation was alleviated by the fact the menu was pan-African, serving food from across the continent, and thus the transgression is forgiven.
The veggie combo (almost enough for one, but not quite, with this topic being grounds for deep and detailed discussion amongst us) was an interesting mix of various dishes: large chunks of vegetables (potatoes, zucchini, carrots) with a rich tomato sauce; the carrot/potato/green bean combo we are accustomed to seeing; a yellow lentil dish; and sauteed greens. We found it not spicy, and quite refreshing. Worth the endless journey to arrive at this state of grace.
As with many vacations, this one was expensive by the standards of home, but regardless, we were able to relax amidst it all. Afterwards, we found ourselves mentally refreshed, emotionally inspired, and scientifically reinvigorated.
Please note: Adal is closed on Mondays, so you will have to enjoy your immense plates of cous cous elsewhere on that day. We would recommend Adal to any member of SEFRI, REFRI or other EFRI looking for a getaway to calm the soul and to prepare you to take on the weight of the world with the heavy responsibilities of your day to day work that benefits all of humankind.
