We offer 100% hands on food science based cooking lessons in Rome & Farm to Table classes in Sabina in English, Italiano or Français. Family run, small business, all italian, all organic, local and pesticide free products

LEARN
We believe understanding the science of food; how and why things work;
help you cook better. This knowledge provides you with confidence in the kitchen and allows you to troubleshoot those recipes that weren't transcribed quite right. We also believe that giving you an historical background on the dish you prepare, gives context to why certain ingredients are used and where traditions come from and are held onto so tightly. TASTE
In our classes we want you to taste the variety Italy has to offer. The products we have chosen for our lessons are meant to reacquaint your with the freshness and aromas one typically finds only in Italy. All of the recipes, methods & techniques we teach come from the 'comune' where they originated. Our goal is to uphold original Italian traditions championed by organisations like SlowFood, Coldiretti & CampagnaAmica

CARE
We have developed a network of local farmers, millers & dairy producers as well as other organic suppliers from who we regularly get our produce. And we give back to the local communities we work with through an exchange of services as well as an annual donation from our 4 Roman Pastas class to the city of Amatrice. We are a small family run Italian company that supports the national & regional economy promoting Italian gastronomic culture. ABOUT THE SCHOOL
Our purpose built professional kitchen in the heart of Rome offers you the space to work individually or in group in comfort. All of our work tables are restaurant grade stainless steel allowing for easy and consistent disinfection between lesson modules & classes. Our hand washing areas are outfitted to be hands free for safer hygiene and we are equipped with a restaurant grade dishwasher that sterilizes every load. Our tasting area seats 6 at a round table very nicely and for events like EVOO Tasting & Pairing (8-10) we set up our work tables to make a large square space at which students stand.

Our Story

We are small family run cooking school in the heart of Rome offering 100% hands on instructional lessons in Pasta entirely by hand, Italian & French Pastries, Pizza, Bread, Knife Skills / Butchery, Charcuterie, Chocolate, EVOO tastings & pairings with Johnny Madge and more....

We give one class per day and our lessons run 4-5 hours long and have a max of 6 students per session. To find out what classes are on each week, check our calendar page on the website. You can also sign up for our last minute available spaces page on facebook or send us your whatsapp number for a weekly broadcast.

You can book an unscheduled class with 72 hour advance notice or join an already scheduled lesson up to 24 hours before it takes place.
