I had to share with you Riccardo! This was in with my rolling board and tools- I ordered it months ago but only opened it today as I’m finally ready to make pasta again. Sooooo chuffed!
Tonight we gathered as coworkers , families and friends to make ravioli with Chef Riccardo from Rome. Made new friends! Had a great time! Learned to make great food!!! Thanks everyone!!

Our daughter took a class from Riccardo live in Rome and said it was one of the highlights of her trip. Once she got back to San Francisco, she insisted my wife and I take one of his classes with her online. So fun and, needless to say, so delicious. We learned a lot! For example, tons of salt in the pasta water. Riccardo said he had never heard of rinsing the cooked pasta like Americans do.
He has the perfect personality and temperament to make this fun , easy and creative.
Totally recommend!!

Obviously, it's Lasagna!

I remember when I was a child that I fought with by brother over who got the crunchiest Lasagna portion. Usually that part is the most desired part and it's on the corner. I remember we always asked our mom to give us that part.

Sfoglia verde 💚 [Green pasta sheet]

Next Saturday, Feb 5th I will teach an online course on Lasagna sfoglia verde, which is the traditional Lasagna with ragù Bolognese but it is made with green pasta layers. 🍃

To give this beautiful color we can use many different veggies like spinach, swiss chard, nettle, borage and others. To obtain an homogeneous pasta dough, after boiling and drying the vegetables blend them directly with the eggs. Then add the green mixture to the flour and start kneading. If the egg/veggie ratio is correct, the dough will have the same characteristics as a normal egg dough.

Hello! A new year has begun, hopefully the year of the turning point, of the end of this pandemic. My year has started with good intentions, I am working on new recipes for online classes. Stay tuned because in the next few days the calendar of will be released.

LASAGNA VERDE AL RAGÙ

What to say? I love Lasagna 😍 in many Italian families this is a must to do on a Sunday lunch.

Did you know that the traditional Lasagna from Bologna is made with green pasta sheets. 🟩 Spinach gives it its color.

Triangoli ▶️▶️▶️

I really like this pasta shape, it looks so perfect and easy to make.

Roll out the dough into a thin sheet, cut 4cm squares, add the filling (my filling was butternut squash, amaretti, pear mustard, Parm, nutmeg), join two opposite ends on themselves and push the air out of the filling to seal the dough and give it the triangle shape. If you want to make indented edges, use a fluted pastry wheel.

Make this pasta shape is the beginning step to make more advanced pasta shapes like Tortellini, Balanzoni or Tortelloni.

Black Pasta ⚫

🍽️ Bottoni di spigola, pomodorini gialli e timo

To color the pasta I used squid ink, I added 1 tbsp of squid ink in my vulcano of flour and stirred with eggs. Easy!

Fettuccine lover ♥️

When I make the dough for Fettuccine, I use to mix Semolina and 00 Flour. The first one gives a rough texture and a good resistance to the cooking while the second flour gives lightness to the dough. A lot of people think that Fettuccine and Tagliatelle are the same thing but actually they aren't. Fettuccine is famous in Rome and boundary areas. Tagliatelle comes from Emilia Romagna - Bologna and it's a pasta usually made only with 00 flour and eggs, it's thinner and wider. Ciao

It's hard to look back, the last year and half has been very challenging but I'm a full optimistic and I believe we're going to a great time. Tourists are coming back and I'm so happy to restart with cooking classes!

MAKE PASTA AND BE HAPPY 🍝

I took a long weekend off with my family to relax and enjoy the beautiful island of Ponza. Four days of sun, good food and some sailing time too ⛵.
I can't travel without my rolling pin so on "Sunday pasta" I decided to fight the gravity and made some fresh fettuccine on the boat. It was a bit challenging but here the result!!
