🍷 Where the land speaks through the wine.

During the Experiential Food & Wine Tourism Module, students visited Monte delle Vigne in the Parma hills, guided by Prof. Giovanni Sogari and Prof. Paolo Tegoni. Set across 60 hectares in the heart of the Colli di Parma DOC, this certified organic winery is among the finest expressions of the territory.

From the cellar to the tasting table, students explored production processes and excellent local products, gaining firsthand understanding of how deep knowledge of the territory is the foundation for designing great tourism experiences. 🎓

What makes a food and wine experience truly memorable?

In the Co-Creating Food Tourism module, Prof. Francesca De Canio led students to explore a key question in food destination design: what transforms a meal, tasting, or culinary journey into a lasting memory for travelers.

Students contributed their own stories, sharing personal experiences and contrasting perspectives from various cultural backgrounds. In this setting, theory serves only as a starting point. Each voice enriches the learning experience.

Experiences should be lived firsthand and then shared in the first person.

This reel, created by student Andrés López, as part of the module Co-Creating Food Tourism: Building Engaging Culinary Travel Models, captures the visit to Domaine Freyburger, in Alsace, France.

A meaningful learning moment in which students explored the winery, discovered the estate's story and production, and experienced the pairing of chocolate and wine to understand how tasting can enhance the value of a destination.
