Agosto finisce, la cucina no. A settembre a Sorrento c'è la luce migliore dell'anno, arrivano i primi fichi e l'uva, e le classi tornano piccole come piacciono a noi. Se hai rimandato tutta l'estate, questo è il mese giusto.

August ends, the kitchen doesn't. In September Sorrento has the best light of the year, the first figs and grapes arrive, and our classes go back to being as small as we like them. If you've been putting it off all summer, this is the month.

"Mangia con me" da noi non è il nome di un'esperienza: è quello che ti dice una nonna quando entri in casa e non hai ancora tolto la giacca. La classe è solo la scusa. Quello che ti porti a casa è il pomeriggio.

"Eat with me" isn't the name of an experience here: it's what a grandmother says when you walk into the house and haven't even taken your jacket off yet. The class is just the excuse. What you take home is the afternoon.

A un certo punto, quando i piatti sono vuoti e fuori è già blu, partono le tammorre. Costumi veri, tarantella vera, e nel giro di due minuti nessuno è più seduto. Non è nel programma della classe: succede perché da queste parti si finisce così. Se capita anche a te, lasciati andare. 🎶

At some point, when the plates are empty and the sky outside has gone blue, the tambourines start. Real costumes, real tarantella, and within two minutes nobody is sitting down any more. It isn't in the class programme: it happens because around here that's how an evening ends. If it happens to you too, just go with it.

Non è un laboratorio d'acciaio con le luci fredde. È una cucina vera: pavimento in cotto, credenza di legno, i barattoli della pasta secca sul piano, le pentole di alluminio sulla mensola e lo strofinaccio con scritto "Lucia" appeso al forno. Ci si sta stretti quando siamo in tanti, e va benissimo: è così che si cucina nelle case, non nei programmi TV.

It isn't a steel lab under cold lights. It's a real kitchen: terracotta floor, a wooden dresser, jars of dry pasta on the counter, aluminium pots on the shelf and a tea towel embroidered "Lucia" hanging on the oven. It gets crowded when there are a lot of us, and that's fine: this is how people cook in homes, not on TV shows.

Qui i limoni non sono un decoro: sono un ingrediente, un profumo e mezzo dispensario di casa. Delizia, limoncello, la scorza nell'insalata, l'acqua con il ghiaccio d'estate. Se vieni in classe, uno te lo facciamo raccogliere. 🍋

Here lemons aren't decoration: they're an ingredient, a scent, and half the household remedy cabinet. Delizia cake, limoncello, zest in the salad, iced water in summer. If you come to class, we'll have you pick one yourself.

Le classi di fine agosto si stanno chiudendo. Lavoriamo con gruppi piccoli — è l'unico modo perché ognuno abbia davvero le mani in pasta e non guardi qualcuno cucinare. Se sei a Sorrento in questi giorni e volevi provare, è il momento di scriverci.

Quello che non si vede nelle foto: la pentola di coccio sul fuoco dalle nove del mattino, le polpette che sobbollono nel sugo da un'ora, il basilico lavato tre volte. Quando arrivi tu sembra tutto facile — ed è esattamente l'effetto che volevamo.

What the photos don't show: the terracotta pot on the stove since nine in the morning, meatballs simmering in the sauce for an hour, basil washed three times. By the time you arrive it all looks easy — which is exactly the effect we were going for.

Si arriva sconosciuti e ci si ritrova in cinque intorno allo stesso tagliere, con le mani sporche e qualcuno che ride di come hai chiuso il raviolo. Poi ci si siede tutti insieme e si mangia quello che si è cucinato — e a quel punto nessuno ha più voglia di alzarsi. È per questo che facciamo questo lavoro.

You arrive as strangers and end up five around the same board, hands covered in flour, someone laughing at how you sealed your ravioli. Then everyone sits down together and eats what they cooked — and by then nobody wants to get up. This is why we do this job.
