Women who cooked without recipes, who fed families without recognition, who carried the weight of care consistently, day after day.

At Mama Florence, we are a female project. Conceived, built and led by women with many men and chefs working on and with the project. Happy, talented, respected men who chose to be here shoulder to shoulder.

Mama builds a place where what matters is passion, skill and honesty. Not gender, not ego, not title.

We make mistakes. We carry enormous loads. We doubt and start over. But one thing has never changed in over a decade at Mama Florence:

The honest desire to be — not to appear.

To actually live the idea of Italian cooking, teach it, share it — with all the imperfection and all the love that a real kitchen demands.

To every woman who has worked with us over the years, and to every woman who has ever built something real, quietly and stubbornly — this day is for you. 🌸

Mama non è una persona sola. È la somma di un'eredità. Donne che cucinavano senza ricette, che nutrivano famiglie senza riconoscimento, che portavano il peso della cura ogni giorno, con costanza.

Da Mama Florence siamo un progetto femminile. Pensato, costruito e guidato da donne, con tanti uomini e chef che lavorano nel progetto e con il progetto. Uomini talentuosi, rispettati, che hanno scelto di esserci, fianco a fianco.

Mama costruisce un luogo dove ciò che conta è la passione, la competenza e l'onestà. Non il genere, non l'ego, non il titolo.

Sbagliamo. Portiamo carichi enormi. Dubitiamo e ricominciamo. Ma una cosa non è mai cambiata in oltre dieci anni da Mama Florence:

Il desiderio onesto di essere — non di apparire.

Di vivere davvero l'idea della cucina italiana, insegnarla, condividerla — con tutta l'imperfezione e tutto l'amore che una cucina vera richiede.

È nata così una delle collaborazioni più significative che ci siano capitate: poter trasformare un evento in qualcosa di concreto e tangibile per chi ne aveva bisogno.

Una tonnellata di prodotti alimentari di base — sono colazioni, pranzi e cene per decine di famiglie fiorentine che l'Associazione Pane Quotidiano assiste ogni giorno dal 1898 a Firenze, una città dove la povertà vera riguarda tanti, ben più di quanto si pensi.

Speriamo di poter replicare presto, per supportare Firenze. 🙏

Today, we celebrate a historic recognition: Italian cuisine has been added to the UNESCO list of Intangible Cultural Heritage — and our hearts (and kitchens) are full. 💛🍝

As UNESCO beautifully puts it, Italian cuisine is:

"A communal activity that emphasizes intimacy with food, respect for ingredients, and shared moments around the table."

This is exactly what Mama Florence was born to celebrate. From day one, our mission has been to create a place where food is more than a recipe — it's a language of connection, memory, and culture.

Born and raised in Bologna, Italy’s legendary capital of fresh egg pasta, Stefano brings the heritage of Emilia-Romagna straight to our kitchen. Every tortellino he folds, every dough he rolls, carries the depth of a tradition he has lived since childhood — one rooted in family, passion, and the simple joy of cooking together.
But there’s more to him than incredible pasta. Stefano is an artist in every sense: a photographer, a creator of handcrafted audio systems, an entrepreneur, and a graduate of the Academy of Arts in Bologna. His story began at just 15, working in local trattorias to support his studies and to deepen his connection to true Italian cuisine.
In class, you’ll find him laughing with guests, guiding hands, sharing stories, and showing — with patience and charm — what makes Italian cooking so soulful. His energy fills the room; his generosity fills every dish.
