“WINE CELLAR”



Barrel or Barrique - a vessel to age wine which is usually made from oak.

Batonnage - French term for stirring of the lees.

Cap - name for the material that forms at the top of a fermenting vat made from the seeds, stems and skin.

Carbonic maceration - fruit-forward wines, achieved by filling vats with carbonic gas while using whole grape clusters.

Chaptalization - adding sugar before or during fermentation to boost sugar levels in underripe grapes.

Cold Maceration - low fermenting must temperature maximizes color, aroma, and raw material extraction.
Delestage - French term for racking and returning a wine back to the tank to facilitate extraction of color and flavour.

Destemming - is the removal of the grapes from the stems.

Fermentation - the process of turning sugars into alcohol.

Fine Lees - some wines are aged on their fine lees (sur lie).

Foudre - a large wooden vat, larger than typical oak barrels, often with the capacity to hold more than a thousand litres of wine.

🍾 Hollywood star Jean-Claude Van Damme launches Irish whiskey brand named Old Oak. He was interested in launching a bourbon, but friends convinced him to ‘go back to the roots of whiskey and find an Irish whiskey’ to invest in.

🍾 Château Margaux faced changes: Corinne Mentzelopoulos is retiring as CEO (43 years in charge!!!) and is handing over the reins to her children, Alexis and Alexandra.

🍾 Champagne House Bollinger has achieved B Corp status demonstrating a strong commitment to social and environmental responsibility.

🍾 English sparkling wine producer Exton Park releases sea-aged its 2014 Blanc de Blancs. The wine was aged 60m under the sea for 12 months.

🍾 Champagne Billecart-Salmon has diversified its holdings by acquiring a 20-hectare estate in the Loire Valley, which was previously under the ownership of the innovative winemaker Jérôme Bretaudeau.

🍾 Hollywood actor Brad Pitt has introduced a Champagne cuvée known as "Petite Fleur" - rosé champagne blend of Chardonnay Grand Cru and 5% Pinot Noir.
