Great sushi rice (shari) isn't just seasoned—it is defined by the exact style of vinegar selected behind the counter.
1. Komezu (Classic White Rice Vinegar)
Profile: Mild, clean, and gently acidic with a crisp finish.
Best For: Salmon, yellowtail, and delicate white fish. It keeps the rice pearly white and allows the natural sweetness and fat of fresh fish to take center stage.
2. Akazu (Traditional Red Vinegar)
Profile: Deeply savory, rich in umami, and naturally aged for years using fermented sake lees (sake kasu).
Best For: Authentic Edomae-style sushi, fatty tuna (Otoro), sea urchin (Uni), and cured mackerel (Saba). It tints the rice a warm amber color and cuts beautifully through rich, oily fish.
3. Kurozu (Black Vinegar)
Profile: Earthy, robust, slightly smoky, made from whole brown rice or grain.
Best For: Seared (Aburi) sushi, cooked eel (Unagi), or modern fusion creations. Chefs often use it sparingly in signature blends to add complexity and punch.
4. Awasezu (The Master Seasoning)
Profile: Pure vinegar is too sharp on its own. Awasezu is the chef's balanced blend of vinegar, sea salt, sugar, and steeped kombu (kelp).
Best For: Folding into piping-hot rice inside a wooden hangiri tub to coat every grain, creating that irresistible glossy shine and mouthwatering aroma.

It is always a privilege to do what we love, but moments like today make it truly extraordinary. 🌸
We had the distinct honor of welcoming back Sir David and Lady Victoria for their second visit to our sushi bar. Having them return, call me by name, and share that our sushi is the best they’ve had is a compliment that deeply humbles and inspires our entire team.
Moments like this remind us why we dedicate ourselves to the art of sushi every single day. To Sir David, Lady Victoria, and all of our wonderful guests who share their time and appreciation with us—thank you from the bottom of our hearts for making our craft so rewarding. 🍣✨
We look forward to crafting your next memorable meal soon!

The Hangiri & The Yanagiba
✨ The Secrets to Restaurant-Quality Sushi at Home!
If your sushi rice doesn't have that perfect shine, or your fish cuts aren't clean, these two tools are your new best friends.
🌳 Meet the Hangiri (Wooden Sushi Rice Bowl):
How to Use: This is where the magic happens! The large surface area allows the hot rice to cool quickly, while the unfinished cedar wood absorbs excess moisture (the key to glossy, non-sticky rice). You must soak it in water for 15-20 minutes before use so the rice doesn't stick to the wood.
Take Care: This is a long-term investment! After use, rinse with warm water and a soft sponge. No soap. Air dry in the shade (direct sun can crack it). To keep it sanitized, you can lightly wipe it with food-grade alcohol or a weak vinegar solution occasionally

# # # The Scientific and Traditional Synergy of Japanese Accoutrements
In authentic Japanese gastronomy—particularly the Edomae tradition—the accompaniments served with sushi and sashimi are never mere decorations. They represent a sophisticated intersection of ancient food preservation and culinary science, curated to enhance safety, digestion, and taste.
# # # # 1. Wasabi (Japanese Horseradish) & Raw Fish
* **Primary Function:** Antimicrobial Protection & Flavor Enhancement
* **The Science:** Wasabi naturally contains **isothiocyanates**, volatile compounds with potent antimicrobial properties. In the era before refrigeration, it was crucial for inhibiting bacterial growth in raw seafood.
* **The Gastronomy:** Its sharp, nasal pungency does not mask the fish; rather, it neutralizes fishy volatiles (trimethylamine) and stimulates the palate, making the natural sweetness and umami of the fish more pronounced.
* **Professional Etiquette:** Traditionally, chefs place wasabi precisely between the fish and the rice, allowing the warmth of the rice to release the aroma. For sashimi, one should place a small dab directly on the fish before dipping into soy sauce, rather than dissolving it into the liquid, which neutralizes its volatile aroma.
# # # # 2. Gari (Pickled Ginger) & Sushi
* **Primary Function:** Palate Cleanser (Resetting the Taste Buds)
* **The Gastronomy:** *Gari* is not meant to be eaten simultaneously with a piece of sushi. It is consumed strictly *between* different varieties of fish to neutralize the lingering oils and flavors of the previous bite (e.g., transitioning from fatty Maguro to delicate Tai).
* **The Technique:** In traditional Edomae service, *Gari* also functions as a brush. Guests or chefs use a slice of ginger to dip into soy sauce and gently drape it across the fish, ensuring the sushi rice never absorbs excessive liquid or breaks apart.
* **Health Benefits:** Ginger aids digestion, warms the stomach, and provides mild antibacterial properties.
# # # # 3. Tsuma Daikon (Shredded Radish) & Sashimi
* **Primary Function:** Digestive Support, Presentation, and Moisture Retention
* **The Gastronomy:** *Tsuma* provides crispness and a high water content that cuts through the rich fat of premium fish like Otoro, Hamachi, or Salmon.
* **The Science:** Raw Daikon is rich in digestive enzymes such as **diastase (amylase)** and **esterase**, which actively assist the body in breaking down heavy proteins and fats, preventing bloating or discomfort.
* **The Functionality:** Visually, it elevates the presentation. Structurally, it absorbs excess moisture from the fish, prevents the delicate flesh from oxidizing against the plate, and keeps the presentation pristine.

# # # # 2. Gari (Zenzero In Salamoia) e Sushi
# # # # 3. Tsuma Daikon (Ravanello Bianco Grattugiato) e Sashimi
* **Funzione Principale:** Supporto Digestivo, Estetica e Controllo dell'Umidità

Using the data from your screenshot, here are the ideal settings for various proteins
Protein Doneness / Cut Temperature (°C) Time
Beef Medium Rare 54–56°C 1–4 Hours
Beef Medium 57–60°C 1–4 Hours
Pork Standard Cut 63°C 1–3 Hours
Pork Belly Fat Breakdown 68–74°C 8–12 Hours
Chicken Breast Juicy/Tender 60–64°C 1.5–2 Hours
Chicken Thigh Fully Cooked 70°C 2–4 Hours
Fish Flaky/Moist
The 3-Step Process
Season & Seal: Season your meat with salt, pepper, and aromatics (like rosemary or garlic). Place it in a vacuum-seal bag or a high-quality Ziploc bag using the "water displacement method."
The Bath: Attach your Sous Vide immersion circulator to a pot of water. Set the temperature according to the chart above. Once reached, drop the bag in.
The Sear: Sous vide cooks meat perfectly edge-to-edge but doesn't create a crust. Remove the meat, pat it bone-dry with paper towels, and sear it in a smoking hot pan with butter for 30–60 seconds per side.
Why Sous Vide?
Consistency: You can’t overcook it. If the water is 55°C, the meat will never go above 55°C.
Texture: It breaks down connective tissues without drying out the muscle fibers.
Meal Prep: You can cook 10 steaks at once, keep them in their bags in the fridge, and just sear them when you're ready to eat.
