Ragusana Focaccia with Ricotta – An Unleavened Sicilian Classic.
Ragusana focaccia is a rustic specialty from Ragusa, in the heart of Sicily. Unlike most focaccias, it’s made with durum wheat flour and no yeast, giving it a compact, golden crust and an authentic, old-world character.
This is how mamma used to prepare it, simple dough, worked by hand, rolled thin, and generously filled before being folded and baked until crisp outside and tender inside. In this version, the filling is ricotta and sausage, a beloved combination, but it’s also famous in the variations with ricotta and fava beans, or ricotta and onion.
