I honestly can’t believe we’re kicking off Season 21 of our Live Italian Cooking Club! 🍝✨🇮🇹

After more than 120 live classes, I am so deeply grateful.

A huge thank you to our returning members - some of you have been here since day one! - and a warm welcome to all the new members who just joined us.

Beyond our library of 120+ recipe replays, the real magic is the joy of cooking live together from my Tuscan kitchen.

Starting on Saturday, August 22, we’ll gather live on Zoom to cook together and enjoy the simple pleasure of making beautiful Italian food.

Once a month, we’ll set the table together. For an hour we’ll slow down, cook, and enjoy a little corner of Tuscany together.

"A Tavola!" This is what we shout in my house when it's time to come to the table.
It’s a mom's invitation to pause, share a meal, and enjoy time together.

I'll be in my kitchen in Bolgheri, you'll be in yours, and for an hour we'll slow down, cook, and enjoy a little corner of Tuscany together.

This isn't a video you watch. We cook together, in real time.

You don't need to be an expert, just come as you are. We'll be waiting for you.

This season, we’ll make some of my favorite dishes:

✅ Sat, August 22 – Rustic Tuscan Tomato & Burrata Tart
Homemade flaky crust, sweet summer tomatoes, cool burrata and basil. My favorite Tuscan aperitivo tart.

✅ Sat, September 5 – Handmade Cannelloni Stuffed with Spinach & Ricotta
Tender handmade pasta filled with spinach & ricotta, baked in velvety béchamel. It’s one of my family’s favorite dishes.

✅ Sat, October 3 – Classic Italian Minestrone Soup
The king of Italian soups: soffritto, seasonal veggies, beans, and Parmigiano rind, the way I grew up.

✅ Sat, November 21 – Italian Chocolate Shortbread Cookies
Crisp, melt-in-the-mouth chocolate cookies, the perfect amount of sweetness. This may become your go to sweet treat.

Every class is recorded. Some members cook live every month. Others cook on Sunday afternoon. Others save a recipe for winter. The Club is designed to fit real life, and we know that it could be busy.

Chiccamisù: approved by Ollie! 🥄✨

For a long time, guests in my in-person classes asked for a Tiramisù, but the traditional recipe was always a challenge to make together.

Not only does it need to rest in the fridge for many hours, but many people are also hesitant about using raw eggs.

I really wanted to find a way for us to make a dessert that everyone feels comfortable with. And one we can all taste and celebrate together the moment it is finished.

That is how the Chiccamisù came to be. It is a no-egg version of the classic. By using crushed meringues instead of whipped egg whites, the mascarpone cream becomes light and airy with a delicate crunch. It is safe, light, and most importantly, ready to eat immediately!

I didn’t give this recipe a name myself, but my family and close friends began calling it the « Chiccamisù » because they saw how much I wanted to find a simple way to make my guests happy. Like Ollie!

For this recipe, I used chili from my friend Rita at . She grows more than 20 varieties of organic chili peppers in the neighboring village of Bibbona.

It’s a dish I love serving at the height of summer, when tomatoes are at their peak and melon is at its sweetest. Simple, colorful, and naturally gluten-free, this is summer cooking at its most effortless and beautiful, best enjoyed outdoors with good crunchy bread and a long table.

In a few days, start to cook with me from your own kitchen! Each season, members of our Cooking Club gather on Zoom from kitchens all over the world. It’s a little different from simply following a recipe or watching a cooking video.

We actually cook together, live.

I’m in my kitchen in Tuscany, you’re in yours, and I’m there to guide you and answer questions along the way.

Join us this season for four months of live Italian cooking from my kitchen in Bolgheri, Tuscany.

This isn’t a video you watch. We cook together. In real time.

After six years of teaching live Italian cooking classes through Chicca's Cooking Club, we’ve created our own way of cooking together online. I believe the best way to learn to cook is by cooking, so every class is live, interactive, and hands-on.

And you’ll never cook alone! My team and I are there to make sure you have the best experience:

🇮🇹 I’ll be your cooking teacher, guiding you step by step and answering your questions in real time.

🇺🇸 Denise joins us live from Oregon to welcome everyone and make sure no one gets left behind while I teach from my kitchen in Tuscany.

🇬🇧 Paolo is 100% Italian but joins us live from the UK to answer questions in the chat and share his knowledge of Italian ingredients and traditions. We call him the “Ingredient Professor.”

Florence, Rome, Venice… Castagneto Carducci.

It always moves me when members of our online Cooking Club make a detour to my small village during their trip to Italy.

That was the case with Helena, a club member from Canada. While traveling through Italy, she came to visit and see in person the kitchen she’s watched so many times on live video.

She got to see where we cook, met our dogs Merlot and Birra, and was greeted by Aldo the cat, the real head of the house. We spent the evening in the garden sharing a simple meal with old friends from Naples.

Just good food, great conversation, and true friendship. Exactly what I love about this community.

Every morning, before the heat sets in, this is my favorite ritual. Walking down into the garden just to see what grew overnight.

There’s something so grounding about picking eggplants that were sleeping under the Tuscan sun just hours ago, knowing they’ll be on our lunch table today.

When you start with ingredients this fresh, you don’t need complicated tricks. Just good extra virgin olive oil (mine is from my garden), salt, and time.

I’m turning these into a simple, slow-cooked parmigiana today.
