🚨 🚨 NEW COFFEE RELEASE 🚨 🚨
This amazing coffee comes from Ratnagiri Estate, a pioneering farm in the application of biotechnology to coffee production. Located in the heart of the Western Ghats rainforest, this region offers a unique microclimate, soil composition, and indigenous microbial ecosystem—ideal conditions for native cultivars to flourish sustainably and express distinct cup profiles.
Hemavathi variety: it’s a semi-dwarf variety introduced by India’s Central Coffee Research Institute. Hemavathi is marked by pale green foliage and excellent adaptability to high-altitude conditions. It is highly regarded for its strong disease resistance and pest tolerance, making it a sustainable choice for regions with diverse climates and microbial ecosystems like the Western Ghats.
The process: it’s a 96-hour extended carbonic maceration natural processed coffee. The Brix of the coffee cherries was 25.9 when harvested and they were put in the Bio fermenters after floater removal. The coffee was inoculated with a mix of different lab-grown cultures. The tanks were then purged with carbon dioxide gas, and the coffee was fermented for 96 hours. After removing the coffee, they were directly put on raised beds for slow drying. The coffee was then dried slowly with constant stirring over the next 31 days
