CIBO RECIPE:
Sausage Risotto:
Servings: 4
300 grams rice (carnaroli or vialone)
200 grams mashed non spicy sausages
1 minced medium onion or shallot
4 spoons Extra virgin olive oil
1 glass dry white wine
Directions:
1. In a saute’ pan stir fry onion in oil until brown.
2. Add mashed sausage and stir fry.
3 Add rice and stir, and when starting sticking add a glass of white wine.
4. Keep cooking stirring and adding water or stock in order to keep moist until rice is cooked.
5. Before serving add black pepper and grated parmesan cheese.
Note:
1. If you like it you can add 4 spoons of tomato puree while you sautee sausages, before adding rice.
2. Carnaroli or Vialoneare rice is preferred but if not available you can substitute arborio rice (somewhat different flavor)
