Travancore Style Chicken Fry

This style of chicken fry is popular in the Travancore region of Kerala. It is spicy, aromatic, coated in roasted coconut, curry leaves, and shallots, giving it a deep, authentic flavor.

Tip - If you're planning to make this for your next get-together, make sure you have sufficient time to make the three/four stages of this preparation.

Some dishes are more than just food—they carry a story, a memory, and a little piece of Kerala in every bite. ❤️

At Menna’s Delight, one of our most loved combinations is the timeless Kerala Fish Molee with soft, lacy Appam.

The delicate fish, gently cooked in a fragrant coconut milk gravy with green chillies, ginger, garlic and spices, comes together beautifully with the light, fluffy-centred and crispy-edged appam.

Fish Molee is believed to have evolved through Kerala’s historic coastal connections and the influence of Portuguese cuisine, eventually becoming a much-loved part of Kerala’s culinary heritage.

And when that creamy, mildly spiced gravy meets a freshly made appam… it’s pure comfort! 😍

At Menna’s Delight, we don’t just teach recipes. We share the stories, techniques and traditions behind Kerala food, so every dish you learn becomes a memory you can recreate at home.

Come experience Kerala, one delicious story at a time. 🌴❤️

TANDOORI CHICKEN OR CHICKEN MALAI TIKKA?

Here’s a little “This or That” for all the North Indian food lovers!

Would you go for the bold, smoky, spicy flavours of Tandoori Chicken?

OR…

Would you pick the creamy, mild and melt-in-the-mouth Chicken Malai Tikka?

Which one is your favourite? And more importantly…

-- Which one would you love to learn to make?

I’d also love to know what other North Indian dishes you would like to learn. Butter Chicken? Naan? Paneer dishes? Biryani? Something else?

My usual cooking lessons are 2.5 to 3 hours, and we typically prepare around 4 dishes in one class — so there’s plenty of time to learn the techniques, cook together and taste what we make.

So, tell me…

Tandoori Chicken or Chicken Malai Tikka?
And what North Indian dish should we learn next?

Let's see what everyone chooses!
