Pina Colada Salad

Give your regular salads a break and try this one today!

Recipe -

Ingredients-
1/4 cup Chopped & Boiled pineapple OR tinned Pineapple
1/4 cup Boiled sweet corn
1/4 cup Chopped & Boiled Carrot
2 tbsp Chopped Capsicum
1/2 cup Coconut Milk
3tbsp Mayonnaise

Method
- Take a bowl and add mayonnaise.
- To this add Coconut milk and mix well until you achieve a good consistency.
- Now add pineapple, carrots, capsicum and sweet corn to it. Mix it gently
- Transfer to serving plate and garnish with mint leaves.
- Served Chilled.

Try this super quick and easy salad now and let me know how it was.

* For Vegan option you can use vegan mayonnaise

Steamed Cheesy Mix Veg bites

In mood of something different this season!

Then these steamy cheesy bites are to go for!
Made with super fresh lauki, they taste different and yummy!

Here’s the Recipe

1 Cup Grate lauki leave it for five mins then squeeze water completely from it
1/2 Cup grated carrot
1/4 Cup very finely chopped capsicum
1tbsp green chillies adrak and garlic paste
1tsp garam masala
1/4 tsp Haldi
1tsp red chilly powder
1/2 tsp amchur masala
1tsp sugar
A pinch of soda bi carb
Salt to taste
1/2 cup grated cheese

Method

- Mix all the above ingredients (Except Cheese) together
- Add 3/4 cup of besan flour and 1/4 Bombay rava 1/4 cup wheat flour
- In the end add salt to taste
- Make thick roti of medium size using your hand then fill with the grated chesse and then tightly roll it into 2 inches size
- Steam in the steamer till done
- Once done remove from the steamer and let it cool for sometime
- Then cut it into little thickness roundels
- Then for tempering add little oil in a kadhai
- Add sesame seeds, mustard seeds, curry leaves, chopped garlic pieces, hing, and pour on it . Then garnish it with finely chopped coriander
