Spicy Mamas Goa

Spicy Mamas Goa my cooking classes Hi I am Suchi
I have been cooking delicate and refined North Indian Cuisine for the past 22 years which is something rare here in Goa.

I’m teaching how to cook Sensational home cuisine, in a open garden jungle kitchen. Food is not only my hobby ~ it’s my Passion. I believe Food cooked with Love ~ Tastes Amazing & Feels more Satisfying. I am self~taught and most of my recipes are from my Grandmother & Mother in law ~ Hardly found in any restaurant. My classes are small with groups of people from all over the world ~ so that I can

interact with each person individually. What better way to learn about my country than through the passage of Food & Flavours ~ including a trip to the local market to Feel & buy Fresh products & local spices. What’s more you get to enjoy eating what you have cooked in an Idyllic setting at the end of the class.

Did you know that Goa’s beloved poder tradition dates back to the 16th century, during Portuguese rule? When the Portuguese arrived in 1510 under Afonso de Albuquerque, they introduced European-style bread to the region.

Since locals were unfamiliar with bread-making, Goans were trained in the art of baking. These skilled bakers came to be known as poders, a term believed to be derived from the Portuguese word “padeiro,” meaning baker.

Over time, the poder became an integral part of village life. In the early hours of the morning, you could hear the familiar “ponk ponk” of the poder’s horn echoing through quiet village lanes—almost like a morning alarm for Goans. Villagers would step out with cloth bags in hand, waiting to buy warm pão, poi, and other traditional breads for the day.

Many poders still use traditional wood-fired ovens and natural yeast made from coconut toddy, preserving age-old techniques passed down through generations. Villages like Majorda, Curtorim, and Raia are especially known for keeping this rich baking heritage alive.

Though modern bakeries and packaged bread have reduced the number of traditional poders, they continue to stand as a symbol of Goa’s cultural identity, simple village life, and timeless culinary traditions.
