Turn every paneer dish into a restaurant delight with this Homemade Paneer Masala Powder πΏ
Ingredients (for about 100 g powder):
β’ 4 tbsp coriander seeds
β’ 2 tbsp cumin seeds
β’ 1 tbsp fennel seeds
β’ 1 tsp black peppercorns
β’ 5β6 cloves
β’ 3 green cardamoms
β’ 1 black cardamom
β’ 1 small stick cinnamon (1 inch)
β’ 1 bay leaf
β’ Β½ star anise
β’ 1 small piece mace (javitri)
β’ ΒΌ piece nutmeg
Powdered spices (add after grinding whole):
β’ 1 tsp turmeric powder
β’ 2 tsp Kashmiri red chili powder (for color)
β’ Β½ tsp regular red chili powder (for heat, optional)
β’ 1 tsp dry ginger powder
β’ 1 tsp amchur (dry mango powder)
β’ 1 tbsp kasuri methi (dry roast lightly, then crush)
Recipe: Dry roast whole spices β cool β grind β mix with powdered spices & kasuri methi β store airtight β use 1β2 tsp in paneer dishes.

Ingredients
β’ Coriander seeds β Β½ cup
β’ Cumin seeds β ΒΌ cup
β’ Fennel seeds β 2 tbsp
β’ Black pepper β 1 tbsp
β’ Cloves β 8β10
β’ Green cardamom β 6β7
β’ Black cardamom β 2
β’ Cinnamon stick β 2 inch
β’ Bay leaf β 2
β’ Star anise β 1
β’ Nutmeg β Β½ piece
β’ Turmeric powder β 1 tbsp
β’ Amchur (dry mango powder) β 1 tbsp
β’ Dry ginger powder β 1 tbsp
β’ Red chilli (dry) β 2β3
Method
1. Dry roast all whole spices (coriander, cumin, fennel, black pepper, cloves, cardamom, cinnamon, bay leaf, star anise, nutmeg, red chilli) on low flame till aromatic.
2. Let them cool completely.
3. Grind into a fine powder.
4. Mix in turmeric, amchur, and dry ginger powder.
5. Store in an airtight jar.

Ingredients
β’ 2 tbsp Cumin
β’ 4 tbsp Coriander
β’ 1 tbsp Black Pepper
β’ 4 Black Cardamom
β’ 2 tbsp Pomegranate Seeds (Anardana)
β’ 6β8 Cloves
β’ 2β3 Cinnamon sticks (1 inch each)
β’ 1 tbsp Amchoor (Dry Mango Powder)
β’ 2 tbsp Kasuri Methi
β’ 6β8 Dry Red Chilies
Method
1οΈβ£ Dry roast cumin, coriander, black pepper, black cardamom, cloves, cinnamon & red chilies till aromatic.
2οΈβ£ Add anardana, amchoor, kasuri methi (no roasting).
3οΈβ£ Cool & grind to fine powder.
4οΈβ£ Store airtight.
5οΈβ£ Use 1β2 tsp in chole for authentic MDH-style taste.
