The origins of Wazwan can be traced back to the royal kitchens of the Kashmiri kings, where it was introduced during the reign of Sultan Zain-ul-Abidin. Over the centuries, Wazwan has evolved into a communal dining experience, particularly associated with special occasions like weddings, festivals, and other significant ceremonies.

Gushtaba, Rogan Josh, Yakhni, Dum Olav are a few Kashmiri foods included in the wazwan. Many more dishes are included in the wazwan where you can explore the traditional foods of Kashmir.

KASHMIRI HAAKH TI KAKAKUR

Servings: 4
Difficulty: easy

INGREDIENTs
1. 500 grams of Chicken with Bones
2. 2 bunches of Haakh ( collard greens)
3. 2 Bunches of Danya leaves
4. 200 ml of cooking oil (Mustard oil)
5. 1 TSP Kashmiri red chili powder
6. ½ tsp turmeric powder
7. 1-1/2 litre of water
8. Salt as per taste
COOKING DIRECTIONS:
1. Wash and cut the chicken in thick pieces. And fry them in cooking oil properly till it turns Brown in colours.
2. Wash the Haak and Danya leaves 2 -3 time in running water.
3. Heat the oil until smoking and remove from heat.
4. Add the Haak and Danya leaves and return to medium the heat to fry them for a few minutes
5. Add the red chili powder and turmeri (Optional) quickly add the fried chicken and 1 L of water to prevent the spices from burning.
6. Cook them properly without any stire for 30 minutes.
Note: if you found water is getting less, You can add 2-3 cups of water additional.
7. Add salt as per requirement, I avoid it’s because I used it the person who is suffering from Hypertension
8. Eat with rice and some plain yogurt, definitely I feel taste of Chicken with Haak and aroma of Danya leaves.

Doon or Walnut Chetin or chutney
Delicious aromatic red pepper chutney with walnuts, packed with antioxidants, omega-3 fats and phytochemicals.
Recipe:
Doon Chyot (without Yoghurt)
1. 10-12 walnut kernels
2. 15-20 dry red chillies soaked in water
3. Salt to taste
Doon Chetin with Yoghurt
1. 10-12 walnut kernels
2. 15-20 dry red chillies soaked in water
3. Salt to taste
4. 4 teaspoons of yoghurt
RED PEPPER WALNUT CHUTNEY
Ingredients:
1. Walnuts – 50 grams.
2. Red pepper 15-20 nos.
3. Salt to taste.
Preparation:
1. First grind the walnuts in Stoned moter with wooden pestle for 4-5 minutes.
2. Add the Red chili/peppers to the moter and crash or Grind along with Walnuts.
3. Grand/Crash it till smooth or little course as per your requirement.
4. Options:
If you are trying make with Curd/ Yoghurt then add 4-5 TSP of Yoghurt and mix it with spoon.
5. Add salt as per your Taste.
Serve as an accompaniment with tandoori dishes Like Kashmiri Tooji Roosted chicken, mutton biryani etc. Or fried snacks or rice dishes.
