Ingredients:
For Chutney:
- 2 tbsp oil
- ¾ cup roasted peanuts
- ¼ cup roasted gram dal (putani)
- 5 green chillies
- 2 tbsp fresh mint leaves
- 1 inch ginger
- 1 cup grated coconut
- Small piece tamarind
- ½ tsp salt
- ½ cup fresh coriander leaves
- Water as needed
For Tempering:
- 2 tbsp oil
- 1 tsp mustard seeds
- ½ tsp urad dal
- 3 dried red chillies
- Pinch of hing
- Curry leaves
Method:
Step 1: Heat oil and roast peanuts and gram dal until golden. Add chillies, mint, and ginger. Roast briefly and let cool.
Step 2: Blend the cooled mixture with coconut, tamarind, salt, and 1 cup water until smooth. Add coriander with ½ cup water and pulse.
Step 3: Transfer to a bowl. Add water to achieve pourable consistency. Mix well.
Step 4: Heat oil for tempering. Splutter mustard seeds, add urad dal, red chillies, hing, and curry leaves. Pour over chutney and mix.
