Country loaf with organic whole wheat flour and non organic a very reasonable priced APF/Maida.A happy bake makes the baker happy ,though I'm also happy when things go wrong as that's the time when I learn the most .I am very happy with this Indian All purpose flour/Maida cheap and yet it is giving me best of results This batard went cold retardation overnite. Yesterday was the best weather suitable for my batards ,the perfect ambient temperature which I usually aim for .Couldnt Miss in the world not to bake .As my starter is fed regularly and was on point ,healthy and strong ,I started hand mixing the dough at around 5.30 evening and baked at 9am.A very airy webbed structure ,open crumbed and a very lite in weight.love the fermentation here .gratitude always πŸ˜ŒπŸ™ @ Mumbai, Maharashtra

Ciabatta ❀️with my latest found All purpose flour/Maida a very reasonable in pricing half a πŸ’΅ per kilo from my grocery store ,I wanted to try my hand at variety of available APF and observe the water absorption property of the flour firstly and then proceeding towards the other variabilities.I'm happy with the result.A very open airy and good fermentation here. still need to give more trials.It is a satisfaction when u bake without any additives like improvers or added gluten as few years before these additives were used as an ingredient required or rather a necessity to make a good bread and not relying solely on the process. I have two more different quality of APF which I want to try sooner.It feels good that trying different flour ,whether organic or non organic,weak gluten or strong bread flour to understand the fermentation is the core .gratitude always πŸ™πŸ˜Œ

Focaccia" with sun dried dill πŸƒ rosemary and thyme , love it ❀️as this focaccia is more special and was challenging as I made this with a very regular and cheaper Maida /All purpose flour.I am glad I got good result with a cheaper Maida/all purpose flour as I focussed more on the process and the variabilities.πŸ˜ŒπŸ™gratitude always

Bombolini" Italian donuts , it's been long I baked Donuts/bombolini . I formulated this bombolini recipe without using egg .This eggless version of Hybrid bombolini has no extract but instead I used my homemade orange peel candies ,lovely citrusy flavour and it is as lite as cloud, as I slided the bombolini dough balls in oil for frying ,they rised so beautifully with the upper and lower surface getting the evening sunny sky and the centre ring lovely lite hue,exactly the way I wanted them to be.The texture when I had the bite of bombolini it was like a candy floss -melt in mouth .A very happy and successful bake.Gratitude always πŸ™πŸ˜Œ

I love making SALADS' ! For me Salad eating or making is an experience in itself; Sometimes just assortment of the ingredients lying in my pantry or on some days I plan with what Element I should majorly focus on.As for today's Salad my focus Element is Potato' .The potato was boiled with skin on as I didn't wanted to loose out on the fibre benefits of the Potato skin.Few potato slices were grilled and paired with Moong Sprouts.This Salad has many Fresh Greens which I just had to pluck from my windowsill garden -Ice Lettuce+Lemon balm leaves+mint leaves+beautiful beetroot chards.And were paired with the fermented red cabbage+carrots coleslaw with mustard spread on the bed of ice lettuce.The Salad platter is heaven with multitude of flavour and texture with drizzle of Honey+lemon+red wine Vinaigrette,sesame seeds and of course Sourdough Slice.Wholesome isn't it πŸ™πŸ»πŸ˜Œ gratitude always

Aged Marbled Cheese " !!! Amazing texture and aroma,still mild not very sharp yet ,love the sweetness of the raw cows milks .❀️fermentation is my love.I Love making cheese.This cheese is Aged for approximately 3/4months ,half wheel is gone πŸ§€gratitude always πŸ™πŸ»πŸ˜Œ

A Simple Vegan FRENCH APPLE TART CAKE" . Flavoured with kinnow and lemon zest and home grown lemon balm leaves.The sweetness of Apple with jaggery with a dash of cinnamon and dried ginger shifts the flavour profile from the French to middle eastern .Some home made kinnow candies ,Little cashew milk and canola oil. This super moist aromatic Tart cake would be a best pair with Turkish coffee.gratitude always πŸ™πŸ»πŸ˜Œ

SIMIT" !! Turkish Bagels .My love for middle eastern food and especially bread is not new .I find a great deal of similarities the way food is prepared ,the process of making sweets or savoury ,the ingredients used and the choice of spices incorporated for the enhancement of flavour I have seen my Nani" my grandma prepare quite a lot similar to the middle eastern food And also culture .Though she was a pure vegetarian and she would not use egg or even onions and garlic .But she sure had known the best substitutes to get the best results. May be in coming few days there will be more of breads but with a approach of middle eastern or how my Nani" whom I saw always on her toes in kitchen feeding us/family whether it was her making "fulka " unleavened flat bread which we call in punjabi which is similar to "Yufka" in Turkey as compared to the leavened bread "Bazlama" leavened bread which we call "khamiri Roti" in punjabi (north India) she always fed us with immense love love and pure love and with gratitude always πŸ™πŸ»πŸ˜Œ

❀️ FOCACCIA " !!! With black sesame seeds .These days I'm doing lots and lots of focaccia on demand . People are loving the flavours,most importantly the super tenderness of the crumb that makes it perfect for making sandwiches . Sourdough Ciabatta ❀ with my regular Indian organic weak gluten all purpose flour. Beautiful lite and airy ,it has the most tender gelatinised crumb ever chewy and get melt in mouth .Joy of Working with Indian flours though always a challenge but the satisfaction can't be expressed in words.gratitude always πŸ™πŸ»πŸ˜Œ

❀️Garden SALAD !!🌸🌻. With home grown mustard greens and Basil's with oranges and baby tomato and Fried Sour CROSTINIS" with cold pressed Xtra virgin olive oil chilli vinaigrette. It seems like this salad sings πŸŽΌπŸŽΌπŸ˜πŸ˜ƒ.. I love making salad or rather I say I love combining elements on the platter which looks colourful and also healthy. Perfect to consume post noon when I feel hungry again after my early simple lite lunch.gratitude always πŸ™πŸ»πŸ˜Œ
